Add the butter, salt, and sugars to the bowl of a stand mixer. Whip them together until smooth & creamy.
Pour in the pudding mix, and mix again - on a lower speed- until evenly combined.
Add the eggs & vanilla extract and mix again, until evenly combined.
In a small mixing bowl, whisk together the flour and baking soda.
Set the mixer to a low speed setting and add the flour mixture, mixing until evenly combined. Scrape the sides and center of the bowl down, and mix again until evenly combined.
Using a spatula, stir in the chocolate chips & oreo cookie pieces.
Cover the mixing bowl with plastic wrap and chill for 30 minutes.
Using a medium cookie scoop, scoop dollops of dough onto a non stick baking sheet.
Bake at 350° for 12 minutes.
Let the cookies cool for 5 minutes
