1 15 oz can black beans, 1 15 oz can yellow sweet corn, 1 large red bell pepper, 1 large green bell pepper, 1 small red onion, 2 tbsp chopped fresh cilantro leaves
  • To a separate mixing bowl add the sour cream, mayonnaise, vinegar, and seasonings. Whisk them together until evenly combined.
1/2 cup sour cream, 1/4 cup mayonnaise, 2 tbsp red wine vinegar, 1 tsp ground cumin, 1 tsp chili powder, 1 1/2 tsp garlic powder, salt & pepper
  • Pour the dressing over the bean mixture, then gently toss everything together until evenly coated.
  • Serve with tortilla chips, and enjoy!

Notes

  • Make it ahead of time and store it in the fridge until you are ready to serve. It is one of those recipes that actually tastes better if it has a chance to sit.
  • Make sure to drain the black beans and corn well and pat the cilantro dry after you rinse it. This prevents the dressing from being runny.
  • Want it a little spicy? Dice up a jalapeno and stir it into the veggie mix.
