- 1 15 oz can black beans drained & rinsed
- 1 15 oz can yellow sweet corn drained
- 1 large red bell pepper seeded & diced
- 1 large green bell pepper seeded & diced
- 1 small red onion peeled & diced
- 2 tbsp chopped fresh cilantro leaves
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 tbsp red wine vinegar
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 1/2 tsp garlic powder
- salt & pepper to taste
Add the beans, corn, peppers, onion, and cilantro to a mixing bowl. Gently stir together until evenly combined.

To a separate mixing bowl add the sour cream, mayonnaise, vinegar, and seasonings. Whisk them together until evenly combined.
1/2 cup sour cream, 1/4 cup mayonnaise, 2 tbsp red wine vinegar, 1 tsp ground cumin, 1 tsp chili powder, 1 1/2 tsp garlic powder, salt & pepper
Pour the dressing over the bean mixture, then gently toss everything together until evenly coated.

- Make it ahead of time and store it in the fridge until you are ready to serve. It is one of those recipes that actually tastes better if it has a chance to sit.
- Make sure to drain the black beans and corn well and pat the cilantro dry after you rinse it. This prevents the dressing from being runny.
