Crispy Chicken Fritters

Crispy chicken fritters are a delicious, easy, kid friendly dish. Canned chicken gets mixed with egg and seasonings before being coated in bread crumbs and fried to a beautiful golden brown.

Ingredients

  • 2 12.5 oz cans premium white chunk chicken very well drained
  • 1 large egg
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp pepper
  • 1/8 tsp dried thyme
  • 1 1/4 cup dried bread crumbs divided
  • oil for frying

Instructions

  • Roughly chop the chicken, or break it up with a sturdy fork, and add it to a mixing bowl.
    2 12.5 oz cans premium white chunk chicken
  • Add the egg, mustard, salt, and spices to the mixing bowl and stir everything together until evenly combined. Add 1/4 cup of breadcrumbs to the mixing bowl again stirring together until evenly combined.
    1 large egg, 1 tsp Dijon mustard, 1/2 tsp salt, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp pepper, 1/8 tsp dried thyme, 1 1/4 cup dried bread crumbs
  • Add the remaining cup of breadcrumbs to a plate and set aside.
  • Divide the chicken mixture evenly into 6 balls, then flatten them between clean hands shaping them into tight patties.
  • Heat 1/4" of oil in a large skillet set over medium - medium/high heat. When the oil's hot fry the fritters on each side until golden brown and crispy. Transfer the crisp fritters to a paper towel lined plate to drain.

Notes

  • If desired you can sub panko for regular bread crumbs.
  • Make sure the canned chicken is VERY WELL drained. Canned chicken has tons of moisture. I actually recommend draining it in a colander by using a spoon to press it into the sides to ensure as much moisture as possible is removed.
  • Adjust the seasoning to suit your tastes.
