Fried Banana Fritters

Fried banana fritters are a quick and easy alternative to waffles and pancakes for breakfast. They're a delicious way to enjoy your overly ripe bananas.

Ingredients

  • 3 large overly ripe bananas peeled
  • scant 1 1/2 cups flour
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 1 tsp baking powder
  • 1 1/4 tsp vanilla extract
  • 1/4 - 1/2 tsp ground cinnamon
  • oil for frying
  • powdered sugar for garnish
  • maple syrup for serving

Instructions

  • Add the bananas to a mixing bowl and mash them with a fork.

  • Add the sugar, baking powder, extract, cinnamon, and flour to the bowl. Stir together until evenly combined. The batter will be on the wetter side, and that's ok.

  • Add oil to a large heavy bottomed skillet set over medium high heat.

  • When the oil's hot carefully drop spoonfulls of the fritter batter into the hot oil, without splashing, and without overcrowding the skillet.
  • Once bubbles appear on top and the bottom's golden brown, flip the fritters over and continue frying just until browned on the other side too. Transfer to a paper towel lined plate to drain. Continue cooking until all the batter's been used.
  • Arrange the fritters on a serving plate and sprinkle with powdered sugar. Serve warm with maple sugar on the side for dipping, if desired.

Notes

  • While my batter is always on the thin side, the size of your bananas and even the brand of flour can effect the consistency. If you're batter ends up on the thicker side, thin it out by stirring in a little milk or water until it's the consistency you prefer.
  • The riper your bananas the sweeter your fritters will be, and you can adjust the amount of sugar called for if needed.
  • Be very careful when 'dropping' spoonfuls of batter into the hot oil. Try to do it without any splashing, because hot oil can cause very serious burns.
  • If using a cast iron skillet you may need to reduce the heat during cooking from medium high to medium.
