Fried banana fritters are a quick and easy alternative to waffles and pancakes for breakfast. They’re a delicious way to enjoy your overly ripe bananas.
My kids love bananas, so I buy a ton of them. I like to buy them in bulk because it’s easier.
As much as it sounds hard to manage you’re produce, those bananas go bad at a seriously ridiculous rate.
So being a frugal Momma, I need to find ways to use up my fruits before they go bad.
We love pancakes and waffles, but they’re not always quick and easy when kids are fussy & hungry. Instead we are incorporating all of those classic ingredients and turning them into a tiny slightly crispy flap jack everyone can love.
These fried banana fritters will quickly replace traditional pancakes as the breakfast bites to be!
INGREDIENTS NEEDED
To make these fried banana fritters you’ll need:
- BANANAS – over ripe ones, these are the bananas you want to use when you don’t know what else to do with them
- FLOUR – all purpose, no other variety
- SUGAR – White, granulated
- SEASONINGS – You’ll use a mixture of vanilla extract and ground cinnamon
- GARNISH – Powdered sugar and maple syrup for garnish
- OIL – Use your favorite oil for frying, we’d recommend canola or vegetable varieties
Once you’ve gathered all your ingredients, you’re ready to get started.
HOW TO MAKE
Making these fried banana fritters is actually pretty easy.
Add the peeled overly ripe bananas to a large mixing bowl, and mash them with a fork or two. Smash them really well.
Add the remaining ingredients to the bowl, EXCEPT for the oil and garnishes. Stir the batter together until everything’s evenly incorporated. It will seem very wet, but that’s ok.
Pour oil into a large heavy bottomed skillet set over medium high heat. Don’t add oil to the rim, you only need 1/3-1/2″ in depth.
Once the oil’s hot, carefully drop spoonful of batter into the oil without causing splashing. Don’t overcrowd the skillet either, I typically fry them in batches of four so that flipping is easier.
When bubbles begin to appear on top and the bottom’s golden brown, carefully flip the fritters over and continue frying just until the other side’s also golden brown.
Transfer cooked fritters to a paper towel lined plate to drain off excess grease, and continue carefully frying the remaining batter in batches until it’s gone.
Serve the fritters warm with an optional dusting of powdered sugar with maple syrup on the side for dipping, and enjoy!
Storing
Any leftover fried banana fritters can be store in the refrigerator in an airtight container for up to 3 days. When ready to enjoy them again they can be reheated in the microwave, oven, or air fryer.
TIPS & TRICKS
- While my batter is always on the thin side, the size of your bananas and even the brand of flour can effect the consistency. If you’re batter ends up on the thicker side, thin it out by stirring in a little milk or water until it’s the consistency you prefer.
- The riper your bananas the sweeter your fritters will be, and you can adjust the amount of sugar called for if needed.
- Be very careful when ‘dropping’ spoonfuls of batter into the hot oil. Try to do it without any splashing, because hot oil can cause very serious burns.
- If using a cast iron skillet you may need to reduce the heat during cooking from medium high to medium.

Instructions

- Once bubbles appear on top and the bottom's golden brown, flip the fritters over and continue frying just until browned on the other side too. Transfer to a paper towel lined plate to drain. Continue cooking until all the batter's been used.
