Funfetti Layered Lush Dessert

This layered Funfetti dessert is a colorful treat featuring creamy layers of frosting, pudding and a dense, cookie like cake.  This easy dessert packs a colorful punch of sprinkles, making it fun for any festive occasion.

Ingredients

  • 1 15.25 oz box Funfetti cake mix
  • ¾ cup butter melted
  • 3 tablespoons water
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 8 oz pkg cream cheese softened
  • 1 cup powdered sugar
  • ½ cup rainbow sprinkles divided
  • 1 16 oz pkg frozen whipped topping thawed and divided
  • 1 1.5 oz box instant vanilla pudding mix
  • 2 cups milk

Instructions

  • Preheat the oven to 350 degrees. Prepare a 9x13 baking dish with nonstick cooking spray.

  • In a mixing bowl, beat the cake mix, melted butter, water, eggs, and vanilla until completely mixed, scraping down the sides as needed.
    ¾ cup butter, 3 tablespoons water, 2 eggs, 1 teaspoon vanilla
  • Transfer the cake batter to the prepared baking dish.
  • Bake for 20 to 25 minutes or until a toothpick inserted in the middle returns clean. Place the baking dish on a wire rack and allow the cake to cool completely.
  • Beat the cream cheese with the powdered sugar until smooth. Stir in ¼ cup sprinkles. Then, fold in 2 cups of the whipped topping. Spread the cream cheese mixture over the top of the cake.

  • Next, whisk together the pudding mix and milk for 2 minutes or until it begins to thicken. Spread the pudding over the top of the cream cheese layer.

  • Add a final layer with the remaining whipped topping and decorate with the remaining sprinkles.
  • Refrigerate for 2 hours prior to serving.

Notes

  • The Funfetti layer will be more like a cookie than a cake.
  • Make sure the cookie layer is completely cool before you put the layers on or the cream cheese layer will melt.
  • Don't skip the chilling time. It needs that time for the layers to set up.
