Pulled Pork Tater Tot Casserole

Pulled pork tater tot casserole is an easy hot dish to throw together anytime. With 5 minutes of prep time, you'll have a hearty dinner that can feed any army of hungry boys on the table in no time at all!

Ingredients

  • 4 cups leftover pulled pork
  • 3/4 - 1 cup barbecue sauce
  • 2 15 oz cans baked beans
  • 1 1/2 cups shredded cheddar cheese
  • 1 32 oz pkg frozen tater tots Do NOT thaw

Instructions

  • Add the pork and sauce to a mixing bowl, and stir together until evenly combined.
    4 cups leftover pulled pork, 3/4 - 1 cup barbecue sauce
  • Spray a 9x13" baking dish with nonstick spray then transfer the barbecue pork to it and spread out in an even layer.
  • Add the baked beans on top of the pork and spread out in an even layer, followed by the cheese. Arrange the entire bag of frozen tater tots evenly over top for the final layer.
    2 15 oz cans baked beans, 1 1/2 cups shredded cheddar cheese, 1 32 oz pkg frozen tater tots
  • Bake at 375° for 40-45 minutes, until the edges are bubbling and the tater tots are crispy and golden brown on top.
  • Carefully remove the hot dish from the oven, and let it rest for 5 - 10 minutes.
  • Top with thinly sliced green onions and/or cilantro leaves (optional), serve warm, and enjoy!

Notes

  • This pulled pork hot dish can be as spicy or as mild as you like it. The barbecue sauce and baked beans will determine the heat level.
  • You could load this up with all sorts of toppings like sour cream when you serve it.
  • Don't skip the resting time. The casserole needs that time to set a bit.
