Raspberry Cheesecake Cookies (Subway Copycat)

Copycat Subway raspberry cheesecake cookies are the soft, chewy cookies packed with creamy cheesecake flavor and tart raspberry pieces you know and love right at home. They are an easy homemade treat when you're craving the classic Subway favorite without having to make a trip for a cookie.

Ingredients

  • 1 15 oz box vanilla cake mix
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1/2 cup unsalted butter softened
  • 1 8 oz block cream cheese softened
  • 1/2 cup white chocolate chips
  • 1 1/2 cups freeze dried raspberries

Instructions

  • Preheat the oven to 350° and line a large baking sheet with parchment paper. Add the cake mix, vanilla, egg, butter and cream cheese to a large bowl. Use a hand mixer to combine everything, about 2-3 minutes.

  • Add the white chocolate and the raspberries and fold and stir using your hands, you will break some raspberries while doing this but try to not break many. Fold until everything is combined.
    1/2 cup white chocolate chips, 1 1/2 cups freeze dried raspberries
  • Scoop about 1 1/2 inch balls and place on the baking sheet. Leave about 2 inches apart from each cookie. Using the palm of your hand or the bottom of a flat glass slightly press down on each top of the cookie dough.
  • Place in the preheated oven for 10-12 minutes. Remove from the oven and let sit for another 10 minutes. Serve and enjoy!

Notes

  • When you are mixing the cookie dough with your hands, you will break some raspberries and that's ok. Just try to not break too many.
  • You can push more white chocolate chips and raspberries into the tops of each cookie.
  • Don't skip the cooling time. The cookies need the time to set.
  • Feel free to substitute freeze dried strawberries instead for a strawberry cheesecake cookie.
