Copycat Subway’s raspberry cheesecake cookies are definitely one Subway cookie I crave.
These cookies put rich cheesecake and sweet raspberries, in one soft, chewy cookie that’s incredibly hard to resist.

The edges have just enough golden crispness while the centers stay tender and buttery, with little bursts of raspberry and creamy cheesecake flavor throughout.
They shake up any holiday cookie tray and are absolutely special enough for a party.
And thanks to a box of cake mix, they are easy enough to make any day for a sweet treat.
Ingredients
To make these you’ll need:

- Cake mix– A 15 ounce box of vanilla cake mix.
- Vanilla extract– Real tastes best.
- Egg– Let it come to room temperature.
- Butter– Unsalted butter softened to room temperature.
- Cream cheese– Softened to room temperature.
- White chocolate chips– Use a good quality chip.
- Freeze dried raspberries– They are often in the specialty fruit and nut area near the produce department, the baking aisle near the specialty products, or by the kids’ snack aisle.
How to Make
These copycat Subway raspberry cheesecake cookies are very easy to make.
Just preheat the oven to 350° and line a large baking sheet with parchment paper.

Set the parchment lined baking sheet aside while you make the dough.
Combine the cake mix, vanilla, egg, butter and cream cheese together in a large bowl using a hand mixer.

Once it’s just combined, fold in the white chocolate and the raspberries using your hands until everything is combined.
Using a cookie scoop, scoop about 1 1/2 inch balls of dough and place them on the baking sheet about 2 inches apart from each other.

Press down on the top of each cookie gently using the palm of your hand or the bottom of a flat glass.
Put it in the preheated oven for 10-12 minutes.

Once the cookies are done, take them out of the oven and let them sit for another 10 minutes.
Serve and enjoy!

Storing
Store these cookies in an airtight container on the counter for 2-3 days.

Tips and Tricks
- When you are mixing the cookie dough with your hands, you will break some raspberries and that’s ok. Just try to not break too many.
- You can push more white chocolate chips and raspberries into the tops of each cookie.
- Don’t skip the cooling time. The cookies need the time to set.
- Feel free to substitute freeze dried strawberries instead for a strawberry cheesecake cookie.

- 1/2 cup white chocolate chips
- 1 1/2 cups freeze dried raspberries

- Preheat the oven to 350° and line a large baking sheet with parchment paper. Add the cake mix, vanilla, egg, butter and cream cheese to a large bowl. - Scoop about 1 1/2 inch balls and place on the baking sheet. Leave about 2 inches apart from each cookie. Using the palm of your hand or the bottom of a flat glass slightly press down on each top of the cookie dough.
- Place in the preheated oven for 10-12 minutes. Remove from the oven and let sit for another 10 minutes. Serve and enjoy!
