5-6 large ripe roma tomatoes, 1 small white onion, 3 cloves garlic
  • Press the 'saute' button, and add the oil to the pot. When hot add the pasta and cook, stirring often, just until it's slightly toasted- roughly 3-5 minutes.

  • Pour the sauce into the pot, stirring to combine, and let it come to a boil.
  • Press the 'cancel' button then add the broth, salt, cumin, paprika, and cilantro to the pot. Stir everything together to evenly combine.
1 heaping tsp ground cumin, 1 tsp smoked paprika, 4 cups chicken broth, salt, fresh cilantro leaves
  • Add the lid turning to close, and set the vent valve to the 'sealed' position. Pressure cook on HIGH for 4 minutes. Carefully open the vent valve, avoiding the hot steam), to perform a quick release.

Notes

  • Stir the sauce while you are bringing it to a boil, scrapping a sturdy wooden spoon against the bottom of the Pot so it doesn't stick. If it sticks, you will get the burn notice on the pot.
  • Adjust the seasonings to suit your taste. You might want to taste it after the soup cooks and add any additional seasoning.
  • Not a fan of cilantro? Substitute fresh parsley or skip it all together.
