Not as in the weather but as in viruses.
I swear as soon as school starts, the boys bring home so many cold bugs, even now that they are older.
While it was worse when they were little, it’s still enough to knock us out for at least a few days each year.
But we still haven’t managed to make it through a fall season without some sort of illness.
And of course when sniffles strike, there’s nothing like a cozy bowl of noodle soup.
While chicken noodle is a classic, we like a little variety.
And this sopa de fideo is the perfect remedy for what ails you and for your menu when all you want is comfort food.
What is sopa de fideo?
Sopa de fideo is a tomato based noodle soup that’s popular in Mexican, Spanish, and other Latin cuisines.
Sometimes you’ll hear it called Mexican noodle soup.
Ingredients
To make this you’ll need:
- Tomatoes– Large roma tomatoes with the stems removed and cut into quarters
- Onion– A small white onion peeled and cut into quarters
- Garlic– 3 cloves
- Spices– Cumin, smoked paprika, and salt
- Pasta– Fideo pasta. You can normally buy this in the international food aisle near the Mexican foods, but you can also buy it online. Can’t find it? Break up spaghetti noodles into thirds.
- Oil– Canola oil
- Broth– Chicken broth. You could also substitute vegetable broth if you want to keep this vegetarian.
- Garnish– Fresh cilantro and lime wedges
How to Make
Instant Pot sopa de fideo is so easy to make!
Just blend the tomatoes, onion, and garlic together in a blender until they are completely smooth.
Add the liner to your Instant Pot and turn the Pot on saute mode.
Heat the oil in the Pot.
Once the oil is hot, saute the pasta to toast it lightly.
Pour the tomato mixture into the Pot and bring it to a boil.
Once it boils, season it with the cumin, smoked paprika, chopped fresh cilantro, and salt, and stir in the broth.
Hit cancel to turn the Pot off of saute mode.
Secure the lid on the Pot and pressure cook on high for 4 minutes.
When the Pot beeps, do a quick release.
Carefully open the lid and ladle into bowls.
Serve with a wedge of lime and extra fresh cilantro if desired.

Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 4 days.
Keep in mind the noodles will absorb the liquid as the soup sits in the fridge so you may want to stir in some extra broth before reheating it.
To reheat the soup, either reheat it in the Instant Pot on saute mode until the soup is warmed through or microwave it until warm.
Is sopa de fideo healthy?
It’s loaded with nutrients from the fresh tomatoes and is very low in fat.
Tips and Tricks
- Stir the sauce while you are bringing it to a boil, scrapping a sturdy wooden spoon against the bottom of the Pot so it doesn’t stick. If it sticks, you will get the burn notice on the pot.
- Adjust the seasonings to suit your taste. You might want to taste it after the soup cooks and add any additional seasoning.
- Not a fan of cilantro? Substitute fresh parsley or skip it all together.

Ingredients
- 5-6 large ripe roma tomatoes quartered
- 1 small white onion peeled & quartered
- 3 cloves garlic
- 1 heaping tsp ground cumin
- 6 oz fideo pasta
- 1 tsp smoked paprika
- 1 tbsp canola oil
- 4 cups chicken broth
- salt to taste
- fresh cilantro leaves + more for garnish
- lime wedges for serving
Instructions
- Add the liner to your Instant Pot, and set aside.
- Add the tomatoes, onion, and garlic to a blender then blend together until completely smooth.5-6 large ripe roma tomatoes, 1 small white onion, 3 cloves garlic
- Press the 'saute' button, and add the oil to the pot. When hot add the pasta and cook, stirring often, just until it's slightly toasted- roughly 3-5 minutes.6 oz fideo pasta, 1 tbsp canola oil
- Pour the sauce into the pot, stirring to combine, and let it come to a boil.
- Press the 'cancel' button then add the broth, salt, cumin, paprika, and cilantro to the pot. Stir everything together to evenly combine.1 heaping tsp ground cumin, 1 tsp smoked paprika, 4 cups chicken broth, salt, fresh cilantro leaves
- Add the lid turning to close, and set the vent valve to the 'sealed' position. Pressure cook on HIGH for 4 minutes. Carefully open the vent valve, avoiding the hot steam), to perform a quick release.
