Ingredients

  • 1 small ripe seedless watermelon
  • 1 cup cold heavy cream must be cold
  • lime zest optional, for serving

Instructions

  • Using a sharp knife, carefully cut the watermelon in half. Using a spoon, scoop some of the center out to create a small well- but be sure to leave plenty of watermelon flesh in tact.

  • Cover the prepared half of the watermelon with cling wrap and place it in the freezer. Freeze for 8 hours, or overnight.
  • Take the watermelon out of the freezer and remove the cling wrap.
  • Pour some of the cold heavy cream into the well in the center of the frozen watermelon. Using a sturdy spoon begin scraping around the edges of the well, and the bottom, pulling the flesh into the cream and mixing them together as you do.

  • Continue scraping and mixing until the mixture thickens, becoming paler, fluffier, and pale pink. It should begin to resemble a soft frozen yogurt in texture.
  • Scoop into small serving bowls, top with a sprinkle of lime zest (if using), and serve immediately.

Notes

  • Be sure to use a small, seedless watermelon. While it 'technically' will still have seeds, they're soft, edible, and will mostly blend in unlike the hard black seeds in a traditional watermelon.
  • Make sure you pick a ripe melon, otherwise the ice cream won't be sweet and it also won't easily scrape away from the sides as is needed to come together properly.
  • Add a pinch of salt to the mixture as you're stirring to enhance the natural sweetness, but just a tiny pinch. This is also totally optional.
  • Before freezing, it can be helpful to cut the tiniest sliver off the bottom of the melon half so that it sits flat on a table. This will help ensure it sits flat later on when your scraping and mixing the watermelon and cream together.
  • Try this with other melons! Cantaloupe and honey dew would also work well.
