Making this easy watermelon ice cream only requires two simple ingredients.

To make it you’ll need:
- Watermelon – A small ripe seedless watermelon. For best results, be sure to use a seedless melon and try to pick one that’s going to nice and ripe for the maximum flavor.
- Cream – Heavy whipping cream. The cream needs to be cold when incorporated into the watermelon for the mixture to come together properly. Keep refrigerated until you’re ready to use it.
Once you’ve gathered your ingredients, you’re ready to begin!
How To Make
Making this 2 ingredient no churn ice cream couldn’t be an easier.
Start by carefully using a sharp knife to slice the watermelon in half.

Using a sturdy metal spoon, scoop some of the flesh out of the center to create a small well. It doesn’t need to be large, maybe a 1/2 cup in size. You want to leave plenty of flesh behind.
Cover the prepared half of melon in cling wrap, then freeze for at least 8 hours or overnight. You can prepare the other half to use as well for a double batch, or just enjoy it the old fashioned way.

Take the frozen watermelon out of the freezer, and remove the cling wrap.
Pour some of the cold heavy cream into the well in the center of the melon. Using a large, sturdy spoon begin scraping around the edges of the well pulling the frozen watermelon into the cream and mixing as you do.

Continue this process until the mixture begins to thicken- becoming thicker and a paler pink. Keep going and it will quickly being to resemble a very soft frozen yogurt in texture.
Transfer the mixture into two small serving bowls, and enjoy immediately. Alternatively, you could freeze it for 20-30 minutes to get it to firm up more, if you prefer.

I recommend serving this with a sprinkle of lime zest over top for just the right amount of citrus-y zip since it’s very sweet; however, that’s totally optional.

Storing
Whether you’re making this watermelon ice cream to store, or looking to save the leftovers, it can be transferred to an airtight container and stored in the freezer for up to one week.

- Be sure to use a small, seedless watermelon. While it ‘technically’ will still have seeds, they’re soft, edible, and will mostly blend in unlike the hard black seeds in a traditional watermelon.
- Make sure you pick a ripe melon, otherwise the ice cream won’t be sweet and it also won’t easily scrape away from the sides as is needed to come together properly.
- Add a pinch of salt to the mixture as you’re stirring to enhance the natural sweetness, but just a tiny pinch. This is also totally optional.
