I have many wonderful qualities, but my morning self could use… help.
So I like to do whatever I can to make life easier before I have my first sip of coffee.
That includes putting together make ahead meals that I can reheat and grab and go for a few days.
Bonus if the meal is hearty and will keep a hungry, growing boy feeling full and happy for awhile after eating it.
And that is exactly the situation we have going on with these breakfast hand pies.
Flaky pie crust houses pockets full of sausage, eggs, and cheese for a satisfying morning meal you’ll love.
What is a breakfast hand pie?
A hand pie is simply an individual pie that you can eat without silverware if you desire.
Breakfast hand pies take this concept and have breakfast staples like eggs and sausage or bacon on the inside.
Ingredients
To make these you’ll need:
- Pie crust– A package of refrigerated pie crust that has enough crust for a double crusted pie.
- Butter– Just a couple tablespoons, divided.
- Onion– Thinly sliced
- Sausage– Cooked and crumbled. Feel free to substitute cooked bacon if needed.
- Eggs– Divided
- Milk– For scrambling the eggs.
- Cheese– Shredded cheddar but you could use any kind you like
- Seasoning– Everything Bagel seasoning and salt and pepper
How to Make the Filling
To make these sausage, egg, and cheese hand pies start by preheating the oven to 450°F.
Carefully roll out the pie dough and cut each crust into 6 rectangles measuring 3X4 inches so that you have 12 rectangles total.
Then heat 1 tablespoon of the butter in a small skillet over low heat.
Once the butter has melted, add the sliced onions and a sprinkle of salt and cook on low, stirring frequently, until onions are golden brown and caramelized.
When the onions are almost caramelized, scramble up some eggs by heating the remaining butter in a large skillet.
Then, whisk together 4 eggs and the milk and pour the mix into the large skillet.
Cook the eggs over medium low heat, until curds form and eggs are cooked through.
Season with salt and pepper to taste.
Assemble the Hand Pies
To assemble the hand pies, place 6 rectangles of pie crust on a baking sheet lined with parchment paper.
Then, top each rectangle evenly with eggs, cooked sausage, caramelized onions and cheese, reserving 2 tablespoons of cheese for topping.
Make an egg wash by whisking together the remaining egg and 1 tablespoon water.
Then brush the edges of each filled rectangle with egg wash.
Place another rectangle of crust over the top of each pie. You may have to gently stretch the top crusts to accommodate the fillings.
Crimp the edges of the hand pies together with a fork.
Brush the tops of the hand pies with remaining egg wash.
Sprinkle with Everything Bagel Seasoning and remaining cheese.
Bake for 12-15 minutes until golden brown.
Can I freeze these breakfast hand pies?
Yes! These homemade breakfast hot pockets freeze really well,
To do it, just let them cool completely and then freeze inside a large freezer safe bag.
You can freeze them for up to 3 months.
How to Reheat a Frozen Hand Pie
To reheat them from frozen, remove one hand pie from the freezer and wrap it loosely in a paper towel.
Microwave for one minute and then flip it over and microwave it again for another minute.
Storing in the Fridge
To store these in the fridge, let them cool and put them in an air tight container.
They will keep for about 4 days in the fridge.
How to Keep Hand Pies from Getting Soggy
One of the biggest questions I get asked about these breakfast hand pies is how to prevent them from getting soggy.
The first part of guaranteeing a nice crisp pie is making sure you use the egg wash on the pie crust as described.
Skipping it could let the pie crust get soggy.
Then if you aren’t eating these the same day and are reheating refrigerated hand pies, I recommend popping them in
a hot oven until warmed through instead of microwaving them.
If you are microwaving frozen hand pies, make sure to wrap them in a paper towel and flip the pie over.
Tips and Tricks
- You can customize the filling to your liking by changing the cheese or subbing bacon for sausage.
- Keep it vegetarian by omitting the sausage altogether and substituting extra veggies like green peppers instead.
- Not a fan of onions? Omit them.

I made this with ham and cheese because that is what I had on hand. I seasoned with salt, pepper, garlic, onion powder, and ground thyme. I didn’t have onions, hence the onion powder. It was delicious. Can’t wait to try it with the everything bagel seasoning. What a great way to use leftover pie crusts!
