Baked Russian chicken is an easy main dish full of tangy flavor. You can throw these zesty chicken breasts together quickly, making it perfect for busy nights.
We almost always have Russian dressing on hand.
It’s one of our favorites with its creamy blend of spices and zippy horseradish.
This dish jazzes up plain old chicken breasts with a healthy coating of the flavor packed dressing, sweet apricot preserves, and salty, savory french onion mix.
What is Russian dressing?
Russian and Thousand Island dressing are pretty similar looking but they have distinct flavors.
Both are creamy, pink, mayonnaise based dressing.
Russian dressing is spicy thanks to horseradish and chili pepper.
Meanwhile, Thousand Island relies on sweet pickle relish to make it sweeter.
Ingredients
To make this you’ll need:
- Chicken breasts– Boneless, skinless chicken breasts with the fat trimmed off.
- Spices– Smoked paprika, salt, and pepper
- Russian dressing– A whole bottle of your favorite brand
- Apricot preserves– For some sweetness to balance out the zip of the dressing. Don’t have them or like them? Sub orange marmalade.
- French onion soup mix– The kind that comes in an envelope or packet.
How to Make
Making this baked chicken is so easy!
Just spray a 9×13″ baking dish lightly with nonstick cooking spray and arrange the chicken breasts to fit in the dish.
Sprinkle the paprika, salt, and pepper evenly out overtop of the chicken.
Set it aside.
Then, whisk together the dressing, preserves, and french onion seasoning in a mixing bowl.
Once the sauce is evenly combined, pour it out over the seasoned chicken.
Bake the chicken, uncovered, at 350° for 45 minutes.
Serve with steamed white rice and your choice of veggies.

Storing Leftovers
Store leftovers in a tightly covered baking dish or air tight container for up to 3 days.
Reheat in a hot oven until cooked through.

Tips and Tricks
- You’ll have no trouble fitting 4 breasts in your baking dish, if using 6 alternate which way the breasts go in the dish and they should fit perfectly.
- Want to fill out the dish some? Drain 1 can of pineapple chunks and pour the pineapple into the casserole dish before baking.
- Prefer a creamier sauce? Whisk 1/2 cup of mayo into the sauce before pouring it over the chicken.
- You can spoon extra sauce overtop of the chicken before serving, if desired.
