This is my routine almost every weeknight between September and May.

And I’m always looking for dinners that taste amazing while being quick and easy to throw together even when I am super short on time.

This baked garlic parmesan chicken is one of my weeknight heroes.

It’s simple, quick, and packed with crowd pleasing flavors.

So it consistently gets happy faces at the table.

And not having to coax my family to come to the table makes my life easier.

So it’s the kind of recipe that makes you feel a little more on top of things even when the day has been anything but calm.

Ingredients

To make this you’ll need:

  • Chicken breasts– Cut in half
  • Seasoning– Paprika, onion powder, and garlic powder
  • Chicken bouillon– A cube of it
  • Lemon juice– Fresh or bottled
  • Topping ingredients– Oil, melted butter, grated Parmesan cheese, pepper, minced garlic, red pepper flakes, Italian seasoning, and paprika

How to Make

Baked garlic parmesan chicken is pretty easy to make.

To do it, preheat your oven to 400° while you prepare your chicken.

Add the chicken, paprika, crushed up bouillon cube, onion powder, garlic powder and lemon juice to a large bowl.

Mix the chicken with the spice until it’s well coated.

Put the chicken on a large baking sheet lined with foil.

Mix the oil, melted butter, Parmesan cheese, pepper, garlic, red pepper flakes, Italian seasoning and paprika together in a medium bowl.

Spoon half of the mixture evenly out over the chicken, spreading it over top of each breast.

Save the other half after the chicken is cooked.

Bake the chicken for 20 minutes or until the chicken is cooked through.

When it’s done cooking, scoop the leftover mixture from the bowl on top again.

Serve and enjoy!

Storing Leftovers 

Store leftovers in an airtight container in the fridge for up to 3 days.

Reheat in the microwave or in a hot oven until warmed through.

Tips and Tricks

  • The seasoning not sticking to the chicken? Brush a little oil on first.
  • If the butter firms up, pop the mixture back in the microwave to melt it again.
  • Make sure not to touch the chicken with a utensil and put it back in the sauce. I like to just spoon it over without touching the chicken breasts and then use a pastry brush to spread it out.

Ingredients

  • 4 chicken breasts cut in half
  • 2 tsp of paprika
  • 1 chicken bouillon cube
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tbsp of lemon juice
  • 2 tbsp vegetable oil
  • 4 tbsp unsalted butter melted
  • 3/4 cup of grated Parmesan cheese
  • 1 tsp pepper
  • 1 tbsp of garlic minced
  • 1 tsp red pepper flakes
  • 1 tsp of Italian seasoning
  • 1 tsp of paprika

Instructions

  • Preheat your oven to 400°. Line a large baking sheet with foil, set aside. To a large bowl add the chicken, paprika, crushed up bouillon cube, onion powder, garlic powder and lemon juice, mix with your hands until well coated. Evenly place on the baking sheet.
    4 chicken breasts, 2 tsp of paprika, 1 chicken bouillon cube, 2 tsp onion powder, 2 tsp garlic powder, 2 tbsp of lemon juice
  • In a medium sized bowl add the oil, melted butter, Parmesan cheese, pepper, garlic, red pepper flakes, Italian seasoning and paprika, stir until combined. Scoop only half of the mixture and plop on each chicken and slightly spread out on top. Save the other half for after the chicken is cooked.
    2 tbsp vegetable oil, 4 tbsp unsalted butter, 3/4 cup of grated Parmesan cheese, 1 tsp pepper, 1 tbsp of garlic, 1 tsp red pepper flakes, 1 tsp of Italian seasoning, 1 tsp of paprika
  • Bake for 20 minutes or until the chicken is cooked through. Once done cooking, scoop the leftover mixture from the bowl on top again. Serve and enjoy!
