Baked Honey Mustard Chicken

And all that happens on top of normal working and raising a family and trying to be a functional adult human.

So as we rush towards the crazy season, dinner needs to be easy.

And in my book that’s a dinner that doesn’t need me to chop it or do anything other than stir some ingredients together and pop it in the oven.

That’s exactly what this baked honey mustard chicken is.

Stir together a few ingredients, dunk the chicken in it, and pop it on the table.

Before you know it, a savory chicken dinner that everyone will eat is ready to go!

Ingredients

To make this you’ll need:

  • Chicken breasts– Boneless, skinless chicken breasts with the extra fat removed.
  • Mustard– Dijon
  • Honey
  • Oil– Preferably extra virgin olive oil
  • Spices– Curry powder and smoked paprika

How to Make

Making this baked honey mustard chicken is so easy!

Just stir the mustard, honey, oil, curry, and paprika together in a small bowl until it’s evenly combined.

Put the chicken in the marinade and toss it to coat.

Use tongs to transfer the coated chicken breasts onto a rimmed baking dish lined with aluminum foil.

Pour the rest of the marinade over the top of the chicken.

Work the chicken around a bit to help the sauce get underneath the chicken too.

Bake it in a 375 degree oven for 40-45 minutes or until the chicken is cooked to 165 degrees.

Serve warm with your favorite sides and enjoy!

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 4 days.

Reheat in a hot oven until warmed through.

  • You can make the marinade in the morning and let the chicken marinade in the mixture in a covered bowl in the fridge until you are ready to bake it.
  • Adjust the seasoning to suit your tastes. The curry powder and smoked paprika are suggestions. You could substitute regular paprika, garlic powder, or even a poultry seasoning blend for the curry powder and smoked paprika.
  • Make sure your chicken is done by checking the temperature with a meat thermometer inserted in the thickest part of the breast.

Ingredients

  • 4-5 boneless, skinless chicken breasts
  • 3 tbsp dijon mustard
  • 3 tbsp honey
  • 2 tbsp extra virgin olive oil
  • 1 1/2 tsp curry powder
  • 1 1/2 tsp smoked paprika

Instructions

  • Line a rimmed baking sheet with aluminum foil. Set aside.
  • Add the mustard, honey, oil, curry, and paprika to a small mixing bowl. Stir together until evenly combined. Add the prepared chicken to the bowl and toss to coat.
    3 tbsp dijon mustard, 3 tbsp honey, 2 tbsp extra virgin olive oil, 1 1/2 tsp curry powder, 1 1/2 tsp smoked paprika
  • Transfer the chicken to the prepared baking sheet in even rows, then pour the remaining marinade overtop. Agitate the chicken a bit so the sauce gets under it too.
    4-5 boneless, skinless chicken breasts
  • Bake at 375° for 40-45 minutes, or until the chicken is cooked to 165℉.
  • Serve warm & enjoy!
