Make them the night before, and you’ve got a hearty breakfast the kids will love that takes no time at all to prepare on busy mornings.
Breakfast is a necessary evil in our house.
Everyone needs some fuel to start the day off on the right foot, but I am the exact opposite of a morning person.
I have zero desire to wake up before I have to on a week day to slave over the stove making a hot meal, but I also feel guilty just throwing a granola bar and some fruit at my kids.
Especially on mornings when they’ve got a full day of school followed by several hours of practice.
The best solution I’ve found is making filling options the night before that we can all just give a quick reheat to on the way out the door in the morning.
This breakfast grilled cheese is a perfect option.
It’s crispy on the outside, gooey cheese on the inside with all your favorite hot breakfast items sandwiched in between.
We pop them in the toaster oven when we get up, and have a hot breakfast sandwich ready to head out the door with us.
Everyone’s happy, including this tired mom who hasn’t yet chugged her mug of coffee.
Ingredients Needed
This breakfast grilled cheese sandwich only requires a handful of ingredients, most of which you probably already have on hand.
You’ll need:
- Eggs – You’ll want four large eggs. I recommend letting them come to room temperature before cooking, but this is an optional step.
- Cream – Two tablespoons of heavy cream. You can sub whole milk or half and half, if needed. The more fat content though, the fluffier the scrambled eggs will be.
- Sausage – A half pound of ground breakfast sausage. This is not the same as ground pork, which is unseasoned.
- Seasoning – For this sandwich you only need a bit of salt and pepper.
- Bread – Four large slices of sourdough bread, specifically. Sourdough is one of the best breads to use for making the crispiest grilled cheese sandwiches
- Butter – A couple tablespoons of softened butter- you can use salted or unsalted, whichever you prefer.
- Cheese – For the best results, we use two kinds of cheeses- both colby jack and sharp cheddar. You’ll need four slices of each.
Once you’ve gathered all your ingredients, you’re ready to whip up a couple of the best breakfast grilled cheese sandwiches.
How To Make
Making these breakfast grilled cheese is as easy as making any regular breakfast consisting of eggs, sausage, and toast.
Except this one is buttery and extra cheesy.
Start by breaking the eggs into a small mixing bowl.
Add the cream and beat with a fork until evenly combined, then set this mixture aside.
Cook the sausage in a skillet, breaking it up into crumbles as it cooks, until it’s completely browned throughout.
Using a slotted spoon, transfer the cooked sausage crumbled to a paper towel lined plate. Set aside and let the sausage drain off excess grease.
Drain off most of the grease left in the skillet, but leave a tablespoon or so behind.
Pour the egg mixture into the pan and cook, scrambling them until just set.
Cover the dish and set the eggs aside. They will finish cooking with residual heat.
Generously spread the butter evenly out one side of all four slices of bread.
Place two slices of buttered bread, butter side down, in a large skillet set over medium heat.
To assemble the sandwich, add two slices of cheese to each piece of bread.
Stir the eggs, breaking them up as needed, then season with salt and pepper to taste.
Divide the eggs evenly between the two sandwiches, spooning them on, then do the same for the sausage.
Finish by topping each with their remaining two slices of cheese.
Close the sandwich by topping each with a slice of bread, buttered side up.
Continue cooking over medium heat until the cheese has melted, and the bread’s golden brown and crispy.
Carefully flip the sandwiches, and repeat for the other side.
Serve warm and enjoy!
Storing
Whether you have leftovers, or are prepping these breakfast grilled cheese sandwiches ahead of time, let them cool completely.
The wrap them in parchment paper, and refrigerate them overnight.
When ready to enjoy, you can reheat in the microwave right in the parchment paper (perfect for on the go!).
Alternatively, you can remove them from the paper and reheat them in the toaster oven or air fryer. They will crisp up the best this way.
Re-wrap the parchment paper around them, and you’ve got a mess free on-the-go meal.
These are best enjoyed within 2-3 days of being made, any longer than that and the bread tends to get soggy.
Can You Freeze Grilled Cheese Sandwiches?
Yes- grilled cheese sandwiches freeze great!
Let the sandwiches cool completely after you’ve prepared them, then wrap each one tightly in plastic wrap.
Add all of the sandwiches to a freezer safe ziplocking bag.
When ready to enjoy, unwrap the frozen sandwiches and reheat them in the microwave or toaster oven.
Frozen grilled cheese sandwiches will be good for up to three months.

- Don’t overcook the eggs! You don’t want them to be dry. When just set, remove the skillet from heat and let the residual heat finish firming up the eggs.
- For best results, use more than one kind of cheese that melts well. Other options include havarti, mozzarella, muenster, and gouda. Steer clear of yellow American cheese though.
