Breakfast Sausage Balls

Breakfast sausage balls without Bisquick are a delicious version of meatballs dressed up for the morning meal. Ground pork sausage, cheddar cheese, hash browns, and a carefully chosen blend of spices turn this into an easy favorite!

Look.

I have many great qualities.

But my ability to be a functional human in the mornings is not one of those qualities.

Which is a shame, what with breakfast being the most important meal of the day and all.

So I love breakfast foods that you can prep ahead of time and have on hand for easy morning meals anytime.

These breakfast sausage balls are just that!

Meal prep and freezer friendly, you can make a big batch and enjoy them at a moment’s notice!

No Bisquick needed!

Ingredients

To make these you’ll need:

  • Sausage– Ground pork breakfast sausage. You could substitute chicken or turkey sausage if you prefer.
  • Cheese– Shredded cheddar
  • Hash browns– The kind in the refrigerated section
  • Eggs– To bind the sausage balls together
  • Spices– Onion powder, garlic powder, cajun seasoning

How to Make

Breakfast sausage balls are so easy to make!

To do it, just mix everything together in a large mixing bowl until it’s evenly combined.

Roll the mixture into 2 to 3 inch balls and put the rolled balls onto a baking sheet lined with parchment paper.

Bake them at 350 for 25 to 30 minutes or until golden on the outside and cooked through.

Serve and enjoy!

Serving Suggestions

You can serve these as a side for all your breakfast favorites like scrambled eggs and pancakes.

For breakfast on the go, you could use warm frozen pancakes as a wrap and nestle two or three sausage balls in between.

And, of course, dipping them in maple syrup (or ketchup if you must) makes these even yummier!

Storing Leftovers

You can store the baked sausage balls in the fridge for up to 4 days or so.

Reheat them in the microwave or oven until warmed through.

Can I freeze sausage balls?

Yes! 

These freeze beautifully!

To do it, just let the sausage balls cool to room temperature.

Then put them into a freezer safe ziplocking bag.

Freeze them for up to 3 months and microwave or reheat in a warm oven until warmed through.

Ingredients

  • 2 lbs ground pork sausage
  • 8 oz shredded cheddar cheese
  • 1 20 oz pkg refrigerated shredded hash browns
  • 2 large eggs
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp cajun seasoning

Instructions

  • Add all of the ingredients to a large mixing bowl. Stir everything together until evenly combined.
    2 lbs ground pork sausage, 8 oz shredded cheddar cheese, 1 20 oz pkg refrigerated shredded hash browns, 2 large eggs, 1/2 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp cajun seasoning
  • Roll into 2-3" balls and place onto a parchment paper lined baking sheet.
  • Bake at 350° for 25-30 minutes.
  • Serve warm & enjoy!
