I am a huge fan of breakfasts that I can do the bulk of the prep for the night before.

Mornings are just not my thing and often they are so hectic that I don’t want to add the task of making breakfast to my list.

But popping something in the oven?

That I can do.

And this cheesy sausage apple breakfast casserole is one of those glorious make ahead breakfasts that I can prep the night before and just throw in the oven the morning of.

Plus it makes 8 servings so I can make it once and have breakfasts for several days in a row or just use it to feed a crowd over the holidays.

Ingredients

To make this you’ll need:

  • Sausage– A roll of ground breakfast sausage
  • Bread– Cubed
  • Eggs– To make a custard
  • Milk– Whole is best
  • Seasonings– Vanilla extract and ground cinnamon 
  • Apples– Large, tart, firm apples like Granny Smiths. Peel them and dice them.
  • Sugar– Granulated
  • Cheese– Shredded cheddar

How to Make

The beauty of this sausage apple breakfast casserole is you can most prepare it the night before.

To do it, start by browning the sausage, crumbling it up as it cooks.

Once it’s cooked, drain it and set it aside.

Then whisk the eggs, milk and vanilla extract together in a large bowl.

In a second bowl, toss the apples with the sugar and the cinnamon until the fruit is coated.

Set both bowls aside.

Then spread half the bread cubes out in a 9×13 baking dish you’ve sprayed with nonstick spray.

Next spread out half the sausage over the bread, followed by half the apples, and finally half the cheese.

Repeat these layers a second time with the remaining ingredients.

Now pour the egg mixture over everything.

Cover the casserole and refrigerate it for at least 8 hours or overnight.

Bake the casserole uncovered at 325 for 55 to 60 minutes or until a toothpick inserted in the center comes out clean.

Slice and serve with a drizzle of maple syrup if desired.

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 4 days.

Reheat in a hot oven or microwave until warmed through.

Tips and Tricks

  • While I don’t recommend using skim or 1% milk in this casserole, half and half would work well in place of milk.
  • Tart apples are a must. You want the tart to compliment the sweet and savory flavors.
  • Maple syrup is so good drizzled on top!

Ingredients

  • 1 16 oz roll ground breakfast sausage
  • 6 cups cubed bread
  • 10 eggs
  • 3 cups milk
  • 1 tsp vanilla extract
  • 2 large granny smith apples peeled & diced
  • 2 tbsp sugar
  • 1 tsp ground cinnamon
  • 2 cups shredded cheddar cheese divided
  • maple syrup for serving (optional)

Instructions

  • Brown the sausage, crumbling as it cooks, and then drain it well. Set aside.

  • To a large mixing bowl add the eggs, milk, and extract and whisk together until evenly combined. In another bowl toss the apples, sugar, and cinnamon together until the fruit's well coated. Set aside.
    10 eggs, 3 cups milk, 1 tsp vanilla extract, 2 large granny smith apples, 2 tbsp sugar, 1 tsp ground cinnamon
  • Spray a 9x13" baking dish with nonstick cooking spray and spread half the bread cubes out evenly in the bottom. Spread half the sausage out evenly overtop, followed by half the apples, and finally half the cheese. Repeat these layers a second time with the remaining ingredients.
    6 cups cubed bread, 2 cups shredded cheddar cheese
  • Pour the egg mixture evenly out overtop of the casserole. Cover and refrigerate for 8 hours, or overnight.
  • Bake, uncovered, at 325°for 55-60 minutes- or until a toothpick inserted in the center comes out clean.
  • Slice and serve warm with a drizzle of syrup overtop, if desired.
