Chicken Caesar salad pizza is a delicious way to enjoy your pizza with less carbs. This protein packed meal uses chicken as the crust and tops the pizza with romaine, Parmesan, and dressing.
I love pizza but sometimes I need less crust in my life.
Only sometimes.
Times when I’m trying to cut back without making myself miserable, I make things like this chicken Caesar salad pizza.
It’s a pizza that forgoes the dough in favor of a low carb, protein packed chicken crust.
Delicious and definitely doesn’t taste like diet food!
Ingredients
To make this you’ll need:
- Chicken– This uses 2 12.5 ounce cans of chicken. If you don’t like canned chicken you can you two boiled, roasted, or pressure cooked chicken breasts instead.
- Eggs– For binding
- Parmesan– Shredded
- Seasoning– Italian seasoning, garlic powder, onion powder, and black pepper
- Lettuce– Chopped romaine
- Dressing– Your favorite light Caesar dressing.
How to Make
Making this chicken Caesar salad pizza is pretty easy.
Start by making the chicken crust by draining the chicken and smashing it up until it is finely shredded.
Then mix the shredded chicken with the eggs, half cup of Parmesan, Italian seasoning, garlic powder, and onion powder in a bowl until very well combined.
Put the chicken mixture onto a parchment paper lined pizza pan you’ve sprayed liberally with nonstick spray.
Press the mixture down and shape it into a thin circle for the crust.
Bake the chicken crust at 400 degrees for 35 to 40 minutes, or until nice and golden.
Top with chopped romaine, parmesan, pepper, and dressing.
Add any additional salad toppings you little heart desires.
Slice and enjoy!
Storing Leftovers
If you think you will have leftovers, I would recommend storing the crust separately from the toppings so that nothing gets soggy.
To store the chicken crust, wrap it tightly and refrigerate it for up to 3 days.
Reheat the crust in the oven until warmed through and top as desired before serving.
