This Costco turkey provolone sandwich recipe recreates the beloved hot sandwich sold in the Costco food court, complete with melty cheese, warm turkey, and bakery-style bread. Savory, cheesy, and packed with flavor, it’s an easy way to enjoy the favorite at home.

My world was rocked when Costco discontinued the hot turkey and provolone sandwich at their food court.
If you’ve ever shopped at Costco, you know a trip through those aisles requires sustenance!
Yes, the pizza and hot dogs are still solid choices but this always felt a little more grown up with the garlic pesto mayonnaise.
Now, while it has returned, it’s not quite the same as it once way and it’s not always available.

My copycat Costco turkey provolone sandwich tastes just like the original, from the warm sliced turkey and melted provolone to the flavorful sauce and toasted bread.
Even better, making it yourself means you can enjoy it whenever the craving strikes instead of waiting until your next grocery run.

Ingredients
To make these you’ll need:
- Rolls– Ciabatta rolls sliced in half lengthwise.
- Olive oil– Extra virgin
- Turkey– Sliced natural turkey sandwich meat
- Provolone cheese– Sliced
- Basil mayonnaise– Mayonnaise, finely chopped fresh basil, lemon juice, salt and pepper

How to Make
This Costco turkey provolone sandwich recipe is so easy to make!
Just heat a large skillet over medium high heat.
Brush the oil over the insides of the rolls and put them in the hot skillet face down.
Toast them just until they are golden brown.
Then take the rolls off the heat and set them aside.
Divide the turkey in halve and layer it in two small stacks that’re roughly the size of the rolls.
Heat the turkey stacks in the hot skillet until it is warm and lightly brown, carefully flipping once to do both sides.
Remove the skillet from heat.
Put two slices of provolone on each bottom roll, then top each with a hot stack of turkey.
Add both turkey and cheese topped rolls to the skillet and cover the skillet.
Let the sandwiches rest just long enough to melt the cheese.
Remove the open sandwiches from the heat and put them on a serving plate.
Set them aside.
Then make the basil mayo by whisking all the ingredients for it together in a small bowl.
Spread the basil mayonnaise on the insides of both top buns and close the sandwiches.
Serve and enjoy!

Storing Leftovers
I don’t recommend storing leftovers of the assembled sandwiches as they will get soggy if you store them for more than a couple hours wrapped tightly in the fridge.
However, you can store any leftover components of the sandwiches individually in air tight containers in the fridge.
Store leftover ciabatta rolls in a sealed bag on the counter.

Tips and Tricks
- Make sure to watch the rolls closely so they don’t burn.
- Costco actually mixes a bit of their Kirkland brand pesto sauce with mayonnaise to make their signature sandwich spread, and you can do that for authenticity’s sake. However, we prefer this basil mayo to get the same flavor without the greasiness as the hot sandwich can cause the pesto version to run.
- You can customize these by using more or less turkey or cheese and adding more or less of the basil mayo. You could also add other toppings like sliced tomato.

Ingredients
For The Sandwiches
- 2 ciabatta rolls sliced in half lengthwise
- 1-2 tbsp extra virgin olive oil
- 4 oz sliced natural turkey sandwich meat
- 4 slices provolone cheese
For The Basil Mayonnaise Spread
- 1/4 cup mayonnaise
- 2 tbsp finely chopped fresh basil leaves
- 1/2 tsp lemon juice
- salt & pepper to taste
Instructions
- Heat a large skillet over medium high heat. Brush the oil over the insides of the rolls then place them in the hot skillet, face side down. Cook just until toasted golden brown, but watch carefully to prevent burning. Remove the rolls and set them aside.2 ciabatta rolls, 1-2 tbsp extra virgin olive oil
- Divide the turkey in halve and layer it in two small stacks that're roughly the size of the rolls. Add the stacks to the hot skillet to heat through and lightly brown, carefully flipping once to do both sides. Remove the skillet from heat.4 oz sliced natural turkey sandwich meat
- Place two slices of provolone on each bottom roll, then top each with a hot stack of turkey.4 slices provolone cheese
- Carefully add both topped rolls to the skillet, cover, and let rest just long enough to melt the cheese. Transfer the rolls to a serving plate, and set aside.
- Add all of the of the basil mayonnaise ingredients to a small bowl and whisk together until evenly combined.1/4 cup mayonnaise, 2 tbsp finely chopped fresh basil leaves, 1/2 tsp lemon juice, salt & pepper
- Divide the basil mayonnaise between the insides of both top buns, and spread out in an even layer. Add them to the sandwiches to close.
- Serve and enjoy!
