Creamy Buffalo Chicken Pasta

My house is full of buffalo chicken fans.

I make variations of it often and this creamy buffalo chicken pasta is one of my favorite versions.

It’s sort of a combination of buffalo chicken mac and cheese and fettucine alfredo.

Trust me when I say everyone will gladly come running when this creamy dish in on the table!

And with only a handful of ingredients and a super quick cook time, you’ll be all too happy to make this even on the busiest of days.

Ingredients

To make this you’ll need:

  • Pasta– Go for penne or rotini
  • Alfredo sauce– 48 ounces of your favorite brand
  • Buffalo sauce– Your favorite brand and preferred spice level.
  • Cheese– Both shredded cheddar and shredded mozzarella 
  • Chicken– Chopped rotisserie chicken or even leftover roast chicken

How to Make

This creamy buffalo chicken pasta is unbelievably easy!

Just cook the pasta according to package directions for al dente.

Once it’s done, drain it well.

While the pasta cooks, stir the alfredo sauce and buffalo sauce together in a large pot and bring it to a simmer over medium low heat.

Once the sauce simmers, stir in the cheese until it is smooth.

Then stir the pasta and chicken into the sauce.

Serve and enjoy!

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 4 days.

Keep in mind, if you are using leftover chicken, your pasta will only stay safe to eat as long as the chicken is, which is generally about 4 days from the first time you cooked it.

Tips and Tricks

  • Want to get fancy? Sprinkle on blue cheese crumbles.
  • You can buy a variety of spice ranges for the hot sauce from mild to extra spicy. Use what suits your preferences.
  • Keep in mind the alfredo sauce will temper the spice level a bit. You can also use less buffalo sauce if you prefer.

Ingredients

  • 1 lb penne pasta can also use rotini pasta
  • 2 24 oz jars alfredo sauce
  • 1 cup buffalo sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 cups chopped rotisserie chicken

Instructions

  • In a large pot of salted water, cook the pasta according to the package instructions for al dente. Drain well in a colander.
    1 lb penne pasta
  • While the pasta's cooking add the alfredo and buffalo sauces to a large pot. Stir together until evenly combined. Bring the mixture to a simmer over medium low heat.
    2 24 oz jars alfredo sauce, 1 cup buffalo sauce
  • Add the cheese, stirring to combine. Once the cheese is completely melted and the sauce is smooth, add the chicken and pasta to the pot. Stir everything together until evenly combined.
    1 cup shredded cheddar cheese, 1/2 cup shredded mozzarella cheese, 4 cups chopped rotisserie chicken
  • Serve warm & enjoy!
