Creamy Cucumber Salad
Creamy cucumber salad is an easy refreshing side dish for any barbecue or picnic. Thinly sliced cucumbers and red onions get tossed in a tangy sour cream based dressing.
I love when the weather finally warms and fresh produce is abundant.
Not just because fresh veggies are everywhere, but because our whole way of eating changes.
In the cooler months, we are more a casserole, stew, roast kind of family.
But in the better weather, we throw whatever on the grill and have easy side dishes like this creamy cucumber salad to go with things.
It just feels so much more casual and like so much less work.
I’m here for it.
And I’m definitely here for this easy cucumber salad.
It’s really refreshing with its creamy sour cream dressing and pairs so well with grilled chicken and fish.
Plus unlike cool weather side dishes like mashed potatoes, this is so easy and can be on your table in a jif!
Ingredients
To make this you’ll need:
- Sour cream– You can substitute plain Greek yogurt if desired.
- Lemon juice– Either fresh or bottled
- Seasoning– Dried dill and salt
- Sugar– Granulated
- Cucumber– A large thinly sliced cucumber
- Red onion– Thinly sliced
How to Make
Creamy cucumber salad is very easy to make!
To do it, whisk the sour cream, lemon juice, sugar, dill, and salt together in a small mixing bowl until evenly combined.
Toss the sliced cucumbers and onion together in another bowl.
Pour the dressing over the vegetables and toss together until everything’s evenly coated.
Let the salad rest for 10 minutes, stir, then serve and enjoy!
Storing Leftovers
While you can store leftovers in an airtight container in the fridge, I highly recommend eating this the day you make it.
The salt in the recipe will pull the water out of the cucumber, making the salad watery if it sits too long.
Can I Use Fresh Dill?
Yes; however, fresh herbs are less potent than dried so you’ll need to use more for the same flavor.
If using fresh dill, I’d recommend using 1 1/2 – 2 tablespoons in this recipe.
Tips and Tricks
- Peeling, or not peeling, the cucumbers is totally up to your preference.
- You have options to customize this salad! Substitute Greek yogurt for the sour cream, use white onion in place of red, or even add halved cherry tomatoes if you want!
- This recipe can be double or tripled, as needed, if feeding a crowd.
