Curried Egg Salad

Curried egg salad is a delicious variation on the traditional recipe and a fantastic way to use up hard boiled eggs. With a creamy mayo base, a slight hint of sweet honey, and curry powder, you’ll love this easy egg salad recipe!

When my boys were young, we always had so many hardboiled eggs to use up after Easter.

I’m not one to let things go to waste so I’d make all the egg salad.

One of my favorite variations is the curried egg salad recipe.

The addition of curry powder and a little honey just adds an extra bit of flavor that takes this salad and makes it feel a little special.

You’ll love it on sandwiches or as a dip for crackers at any springtime brunch.

Ingredients

To make this you’ll need:

  • Hard boiled eggs– Coarsely chop them
  • Mayonnaise– Real full fat mayo and not mayonnaise style dressing.
  • Seasoning– Curry powder, honey, seasoned salt, and freshly cracked black pepper
  • Green onions– Thinly sliced

How to Make

This curried egg salad is so easy to make!

To do it, whisk the mayo and seasonings together in a larger mixing bowl.

Once the the mayo and seasonings are evenly combined, fold in the eggs and green onions.

Serve and enjoy!

Can I make this ahead of time?

Yes! You can make this egg salad ahead of time.

In fact, you may prefer it because the flavors will intensify as it sits.

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 3 days.

Curried egg salad makes fantastic sandwiches when paired with good bread.

Ingredients

  • 12 hard boiled eggs coarsely chopped
  • 1 cup mayo
  • 1 1/2 tsp curry powder
  • 1 tsp honey
  • 1/8 tsp seasoned salt
  • freshly cracked black pepper to taste
  • 1 small bunch green onions thinly sliced

Instructions

  • Add the mayo and seasonings to a large mixing bowl. Whisk together until evenly combined.
