Frozen fish sticks have always been a favorite for my kids. Heck for my pickiest eater, for a little while they were a whole food group.
At the time, as a busy parent in the trenches between work and afterschool activities, I was often just glad to get something on the table they’d happily eat.
In an effort to make sure they’d eat more than just fish sticks, I decided to try finding different ways to turn them into meals that got a little more into them without a fight.
Fish finger sandwiches anyone?
They’re similar to a McDonald’s fish filet, but so much better and plenty more filling.
Throw them together for a quick weeknight dinner, and discover the deliciousness that even your picky eaters will enjoy!
Ingredients Needed
As with all our favorite easy recipes, these fish finger sandwiches have a short ingredient list.
To make them you’ll need:
- Fish Sticks – You can use our homemade fish sticks in this recipe, but if you’re trying to skip the extra work use frozen fish sticks from the grocery store. We recommend a thick, sturdy variety.
- Bread – Thick, but soft, white bread yields the best results as it’s sturdy enough to hold the hearty filling.
- Lettuce – Shredded iceberg lettuce
- Pickles – Dill pickle chips
- Tartar Sauce – Use your favorite store bought variety, or if you have a few minutes you can whip up this easy 5 minute homemade version.
That’s it. Once you’ve gathered your ingredients you’re ready to begin!
How To Make
Making fish finger sandwiches are quick and easy, making them a perfect option for lunch or an easy dinner.
Start by cooking the fish sticks according to the package directions. Once they’re done carefully remove the hot pan from the oven and set it aside.
Set two pieces of bread on a plate and spread some of the tartar sauce on the inside of both slices. Divide the shredded lettuce evenly between the two slices and spread out evenly.
Top each slice with four cooked, crispy fish sticks. If you use a smaller variety, you may need to use another fish stick or two per sandwich.
Add four dill pickle chips to each sandwich, placing them on top of the fish sticks. Then spoon, or drizzle, the rest of the tartar sauce evenly out over top of both sandwiches.
Top each sandwich one of the remaining slices of bread to close, and serve it immediately.
Storing
Unfortunately fish finger sandwiches don’t store well since both the bread and the fish sticks will get soggy. Instead these are best enjoyed fresh.

TIPS & TRICKS
- I recommend using large, sturdy fish sticks for these sandwiches- for example Costco’s Triton brand. If you have to use smaller fish sticks then you may need to use more per sandwich to get the same coverage.
- If your kids like cheese on their sandwich, then you can add a slice of American cheese. Lay it overtop the fish sticks when assembling your sandwiches.
- Not a fan of pickles? Skip them! Similarly, if you don’t like tartar sauce then just spread mayo on the bread instead.

Ingredients
- 8 large frozen fish sticks the good sturdy kind
- 4 slices thick white sandwich bread
- 1/2 cup shredded lettuce
- 8 sliced dill pickle chips
- 1/2 cup tartar sauce
Instructions
- Cook the fish sticks according to the package directions. Set aside.8 large frozen fish sticks
- Spread a bit of the tartar sauce on the inside of two slices of bread. Divided the shredded lettuce evenly between the two halves, spreading evenly overtop.4 slices thick white sandwich bread, 1/2 cup tartar sauce, 1/2 cup shredded lettuce
- Add four crispy fish sticks to each sandwich, then top them each with four dill pickle chips.8 sliced dill pickle chips
- Drizzle the remaining tartar sauce evenly out overtop. Top each sandwich with one of the remaining slices of bread to close.
