And one of the things I grow every year?

Green beans.

There’s nothing better than fresh green beans- especially in a classic dish like this green bean almondine.

What is green bean almondine?

Green bean almondine is a French side dish featuring green beans sauteed in butter and topped with almonds.

The result?

Totally to die for.

Ingredients

To make this you’ll need:

  • Green beans– French green beans preferably. They are longer, thinner, and a little bit earthier than garden beans.
  • Butter
  • Almonds– Sliced raw almonds
  • Shallots– Peeled and finely diced. Don’t have shallots? Use a small sweet onion.
  • Garlic– Fresh garlic cloves, pressed or finely minced.
  • Lemon– The zest and juice of a lemon
  • Salt and pepper– To taste

Once you’ve gathered your ingredients you’re ready to get started!

How to Make

Green bean almondine is an easy recipe that delivers big results!

To make this, start by bringing a pot of heavily salted water to a rolling boil.

Add the green beans and cook for 4-5 minutes, stirring occasionally.

While the beans are cooking, melt the butter in a large skillet set over medium low heat.

Once the butter melts, saute the almonds in the melted butter, stirring often, until the almonds are golden brown.

Turn down the heat to low and stir in the shallots and garlic.

Sauté the shallots and garlic with the almonds for 1-2 minutes to soften them, stirring often.

Once the beans are cooked to the point where they are tender but a touch crisp, transfer the beans to the skillet.

Sauté the green beans in the butter mixture to evenly combine, just until tender.

Stir in the lemon zest and juice and season with salt and pepper to taste.

Serve immediately and enjoy!

How do I know my beans are cooked enough?

You definitely don’t want to overcook or undercook your green beans.

If the green beans are too crisp, they are underdone and you’ll want to sauté them longer on the stovetop.

They should be soft enough to easily pierce with a fork while still have some crispness.

The beans will also be brighter green and more vivid than raw or overcooked green beans.

Tips and Tricks

  • Use low heat to toast the almonds so they don’t burn.
  • If you can’t find French green beans, then use any fresh green beans.
  • Clean the beans first by snapping off or cutting off the ends.

Ingredients

  • 1 lb french green beans
  • 2 tbsp butter
  • heaping 1/4 cup raw sliced almonds
  • 2 medium shallots peeled & finely diced
  • 2 garlic cloves finely minced or pressed
  • zest of 1 small lemon
  • 2 tsp fresh lemon juice
  • salt & pepper to taste

Instructions

  • Bring a heavily salted pot of water to a rolling boil. Add the green beans and cook for 4-5 minutes, stirring occasionally- just until crisp but still tender.

  • While the beans are cooking add the butter to a large skillet set over medium low heat. Once melted add the almonds and saute them, stirring often, until golden brown.
    2 tbsp butter, heaping 1/4 cup raw sliced almonds
  • Reduce the heat to low and stir in the shallots and garlic, continue sautéing for 1-2 minutes- stirring often.
    2 medium shallots, 2 garlic cloves
  • Transfer the beans to the skillet using tongs. Saute quickly, tossing to evenly combine, just until tender.
  • Add the zest and juice, tossing to evenly combine.
    zest of 1 small lemon, 2 tsp fresh lemon juice
  • Season with salt and pepper to taste, and serve immediately.
