Homemade Thin Mint cookies are perfect for fans of the classic Girl Scout cookie! This easy copycat recipe needs only 3 ingredients and no baking whatsoever. How sweet is that?
I absolutely can’t get enough of Girl Scout cookies.
Particularly Thin Mints!
Thin Mints are my favorite from Girl Scout Cookies and one that I will hunt down any Daisy, Brownie, or Girl Scout troop and buy them clear out of business.
Ahem.
I mean, I will actively support these young entrepreneurs as they sell delicious baked goods.
So of course, I had to try recreating them to satisfy my cravings when it’s not cookie season.
These homemade Thin Mints came out so good and I can’t believe how easy they were!
Only 3 ingredients and a bake free prep!
You won’t believe how much these taste just like the original Thin Mints!
Ingredients
To make these you’ll need:
- Oreo cookies– Separate them and scoop out the cream filling.
- Chocolate chips– Semi sweet
- Peppermint extract
How to Make
These homemade Thin Mint cookies are so easy and perfect to make with your kids!
To do it, just twist apart the Oreos and scrape off the middle cream.
Set the cookies aside.
Discard- or eat- the cream.
Then, add the chocolate chips and peppermint extract to a microwave safe bowl.
Microwave them for 20 seconds and stir.
Repeat microwaving the chocolate chips in 20 second increments, stirring in between each time, until the chips are completely melted.
Using a fork, dip the cookies into the melted chocolate.
Flip the cookie all around until it’s heavily coated.
Then scoop up the cookie, making sure the top of the cookie is facing up, and tap the fork on the edge of the bowl to get rid of the excess chocolate on the cookie.
Using another fork, scrape the bottom of the cookie to remove any strings of chocolate.
Place on a tray lined with parchment paper.
Repeat with each Oreo half until they are all coated in melted chocolate.
Let the cookies sit for 1-2 hours or until they are hardened.
Enjoy!
Storing
Store homemade Thin Mints in a cookie tin or other airtight container at room temperature for up to several weeks.
You can also put them in a freezer bag and freeze them for up to 6 months.
Tips and Tricks
- Tapping the excess chocolate off of the cookie also helps the chocolate smooth out on the cookie.
- Be careful not to over cook the chocolate. Chances are good that the chocolate chips will still be holding their shape a bit when they come out of the microwave before you stir them. When they are ready, stirring them will get them to melt into their smooth consistency.
- Freezing these makes them taste even better!

Homemade Thin Mint Cookies (Copycat Recipe)
Ingredients
- 26 oreo cookie halves 13 whole oreo cookies
- 1 1/2 cup semi sweet chocolate chips
- 1/2 tsp peppermint extract
Instructions
- Separate the Oreos and scrape off the middle cream. Set the cookies aside.26 oreo cookie halves
- Combine chocolate chips and peppermint extract in a microwave safe bowl and every 20 seconds stir until completely melted.1 1/2 cup semi sweet chocolate chips, 1/2 tsp peppermint extract
- Using a fork, dip the cookies into the melted chocolate, flip all around until heavily coated, scoop up the cookie making sure the cookie is upright, (top of the cookie facing up) tap the fork on the edge of the bowl, letting all the excess chocolate fall back into the bowl, make sure the cookie is smoothly coated after tapping a bunch.
- Using another fork scrape the bottom of the cookie to remove any strings of chocolate.
- Place on a tray lined with parchment paper and let sit for 1-2 hours until they are hardened. Enjoy!
