Loaded hashbrown casserole is one of those hearty breakfast dishes that feeds even the hungriest of crowds.

It’s a delicious savory option for a holiday breakfast main dish with its combination of potatoes, melty cheese, crispy bacon, savory sausage, and rich gravy.

Ingredients

To make this you’ll need:

  • Hashbrowns– A 2 pound bag of frozen hashbrowns, thawed and drained.
  • Sausage– Cooked, crumbled and drained ground sausage. 
  • Bacon– Cooked crisp and crumbled
  • Spices– Salt, pepper, and garlic powder
  • Cheese– Shredded cheddar
  • Country gravy mix– 1 packet and 2 cups of water
  • Eggs– Beaten
  • Garnish– Sliced green onions

How to Make

This loaded hashbrown casserole is so easy to make!

Just spread the hashbrowns in an even layer in a greased 9×13″ casserole dish.

Top that with an even layer of sausage, followed by the bacon.

Then spread 1 cup of shredded cheese and the seasonings evenly out overtop.

Set the casserole aside while you make the gravy according to the package directions.

Spread it over the casserole in an even layer.

Top the casserole with the beaten eggs, followed by the remaining cheese.

Bake it at 375° for 45-50 minutes.

Take the dish from the oven and let it rest for 5-10 minutes.

Top with green onions if desired.

Slice and serve!

Storing Leftovers

Store leftovers in an airtight container in the fridge or tightly wrapped in the casserole dish in the fridge for up to 4 days.

Reheat in a hot oven until it’s warmed through or microwave individual portions until they are warm.

Ingredients

  • 1 2 lb bag frozen hashbrowns thawed and drained
  • 1 lb ground sausage cooked, crumbled, and drained
  • 12 oz bacon cooked crisp and crumbled
  • salt and pepper to taste
  • 1/2 tsp garlic powder
  • 2 cups shredded cheddar cheese divided
  • 1 pkt country gravy mix + 2 cups water
  • 6 large eggs beaten
  • sliced green onions for garnish

Instructions

  • Add the hashbrowns to a greased 9x13" casserole dish and spread them out in an even layer. Top with an even layer of sausage, followed by the bacon.

  • Sprinkle 1 cup of shredded cheese and the seasonings evenly out overtop of the dish.

  • Prepare the gravy according to the package directions, then spread it over the casserole in an even layer.
