You can make these maple bacon pancake muffins ahead of time and enjoy the taste of slow Saturday morning anytime!
Ingredients
To make these you’ll need:
- Egg– just one
- Butter– Melted
- Vanilla– Real vanilla extract tastes best
- Milk– I recommend whole or 2 percent
- Flour– All purpose
- Baking powder– For leavening
- Salt– To balance the sweet flavors
- Sugar– Granulate
- For topping– a tub of Cinnamon Toast Crunch frosting and maple syrup, and crisply cooked bacon
How to Make
Making maple bacon pancake muffins is pretty easy!
Start by whisking together the egg, vanilla, melted butter, and milk together in a mixing bowl until well combined.
Whisk together the flour, baking powder, salt, and sugar in a second bowl.
Then fold dry ingredients into the wet ingredients until everything is smooth.
Line a muffin tin with cupcake liners and spray it lightly with cooking spray.
Fill each one halfway with pancake batter.
Bake the pancakes muffins at 350 for 10 to 12 minutes, or until golden and a toothpick comes out clean.
When a toothpick comes out clean, remove it from the oven and let it cool.
Fit a piping bag with a 1M tip with icing.
Pipe icing on top of each muffin.
Crumble 6 slices of crisply cooked bacon, and top each muffin with bacon crumbles, and half a slice of bacon.
Drizzle each one with maple syrup before serving.
Serve and enjoy!
Storing
Store these muffins in an airtight container in the fridge for up to 3 days.
Tips and Tricks
- Make sure you are using unsalted butter in the pancake batter.
- Don’t overmix the batter or the muffins will get dense.
- Can’t find the Cinnamon Crunch Toast icing? You could mix a teaspoon of cinnamon into your favorite vanilla or cream cheese icing.
