Microwave Blueberry Muffin Mug Cake
Microwave blueberry muffin mug cake is just the thing when you want a fresh blueberry filled treat. No need to bake up a whole batch of muffins with this single serve muffin that’s ready in less than 10 minutes!
My family is strange.
They don’t really do blueberry muffins.
I know.
But I LOVE blueberry muffins.
I don’t want to bake up a whole batch though just for me.
But I do want to enjoy a fresh blueberry muffin every now and again and that’s where this microwave blueberry muffin mug cake comes in.
It tastes just like a freshly baked muffin and hits the spot each and every time!
Perfect for those occasions when you want a treat yourself- no oven needed!
Ingredients
To make this you’ll need:
- Flour– All purpose
- Sugar– Brown
- Baking powder– So the muffin rises
- Salt– To balance the sweet
- Cinnamon– Optional but I highly recommend it
- Butter– Unsalted, room temperature butter
- Milk– I recommend something other than skim milk. Do at least 2 percent or whole.
- Blueberries– Frozen
How to Make
This microwave blueberry muffin mug cake is so easy!
Just stir the flour, sugar, baking powder, salt, and cinnamon together in a microwave safe mug until everything is evenly combined.
Then work the butter into the flour mixture, squeezing it with clean hands until the mixture resembles wet sand.
Stir the milk in to the mixture until it’s evenly combined into a thick batter.
Then spoon the blueberries onto the batter.
Microwave on high for 90 to 100 seconds or until the cake rises and sets.
Serve and enjoy!
Storing
This is a single serving recipe so you shouldn’t have leftovers.
If you do, cover the mug with foil and refrigerate it for up to 2 days.
When you are ready to enjoy it again, remove the foil and microwave it for a few seconds to warm it back up.
Tips and Tricks
- You can add a drop or two of vanilla extract for more flavor.
- The batter will be thick. If it seems too thick, stir in a teaspoon of extra milk.
- Drizzle some maple syrup or top with whipped cream when you serve it.
- Microwaves may vary in temperature, so you may have to experiment with the cook time some.

- pinch ground cinnamon optional, but recommended
- 1/2 tbsp butter
- 2 tbsp milk + more if batter us too thick
- 1-2 tbsp frozen blueberries
Instructions
- Add the flour, sugar, baking powder, salt, and cinnamon to a microwave safe mug. Stir together with a fork until evenly combined.1/4 cup flour, 1 tbsp brown sugar, 1/4 tsp baking powder, 1/8 tsp salt, pinch ground cinnamon
- Add the butter to the mug, and using clean hands mix & squeeze it into the flour mixture until it's crumbly like wet sand.1/2 tbsp butter
- Add the milk and stir together until evenly combined. The batter should be thick. If it's too thick, then add a small splash of milk and stir together again.2 tbsp milk
- Sprinkle the blueberries out overtop.1-2 tbsp frozen blueberries
- Microwave on HIGH for 90-100 seconds.
