Muffin mix pancakes give you fluffy pancakes when you don’t want to make them from scratch and don’t have pancake mix on hand. Plus, since you can use any flavor of muffin mix you want, you can have fancy, flavored pancakes with no extra work or ingredients.

I don’t, however, love fussing with from scratch pancakes.
Especially when it comes to making things like blueberry or chocolate chip pancakes.
No thanks.
Not before this mama has her coffee.
But muffin mix makes it easy as pie to make any kind of flavored pancakes your little heart desires.
With only 3 ingredients even the world’s worst morning people can get these on the table in a snap.
Ingredients
To make these you’ll need:
- Muffin mix– A 7 ounce package in any flavor you want.
- Milk– Go for 2%.
- Egg
How to Make
To make muffin mix pancakes, start by heating a large skillet over medium heat until a couple drops of water sprinkled on sizzle and disappear almost immediately.
Spray the hot skillet generously with non stick cooking spray.
When the skillet is ready, whisk the ingredients together in a medium sized mixing bowl just until large lumps are gone.
Don’t try to get all the lumps out; the batter will still be a bit lumpy.
Pour 1/8 cup of pancake batter out onto the hot skillet.
You should be able to fit 3-4 pancakes on the skillet at a time, but make sure to allow room for spreading.
Cook the pancakes for 1-2 minutes on the first side, just until small bubbles begin to form on the surface.
Using a spatula, quickly flip all of the pancakes over when the bubbles start to form.
Continue cooking another 1-2 minutes on the second side, until both sides are golden brown and the center’s cooked through.
Once the pancakes are cooked, remove the pancakes to a waiting plate.
Repeat until you have used all the batter.
Serve the pancakes warm with pats of butter and syrup, if desired.
Storing Leftovers
To store leftover pancakes, wrap them tightly in foil and store them in the fridge for up to 4 to 5 days.
How many pancakes does this make?
This serves 8, at two pancakes each and makes 16 pancakes total.
Tips and Tricks
- If you are using an electric griddle, heat it to 350-375 degrees.
- Be careful not to overmix the batter. You only want to mix until the largest lumps disappear. Overmixing will lead to chewy pancakes instead of the fluffy end results you want.
- Have fun with the muffin mix flavors! You could do chocolate, chocolate chip, blueberry….whatever you like!
