Picklewich (Jimmy John’s Copycat)

This Picklewich recipe is a copycat of the popular, limited edition Jimmy John’s menu item. Who needs a roll when you can serve all your sandwich fillings nestled in a large pickle?

If there was ever a sandwich for pickle lovers, Jimmy John’s Picklewich was it.

Yes, was.

Sadly despite being super popular, the sandwich that used a large dill pickle sliced like a sub roll to hold the deli meat was discontinued in late 2024.

And that was a major bummer for me.

But why I’ve picked myself up, dusted myself off, and made my own Picklewich.

It’s just a yummy as the original, totally customizable, and a delicious lunch option if you’re watching your carbs.

Ingredients

To make this you’ll need:

  • A pickle– The largest whole dill pickle you can find
  • Mayonnaise– Real mayonnaise
  • Lunch meat– Slices of turkey
  • Toppings– A tomato slice, a slice of red onion, a piece of American cheese, and a leaf of romaine

How to Make

A Picklewich is as easy to make as a sandwich!

Just slice the pickle in half like you would slice a sub roll or a hot dog bun.

Then scoop the middle, seeded portion of each pickle side out to make a shallow well.

Once you have your pickle boats made, dab them dry with paper towels.

Then pick a half to be the bottom, cutting the outside of the pickle so it will sit flat if needed.

Spread the mayo over the pickle wells.

Fold the lunch meat and tuck a piece into each well with a bit hanging over each side.

Cut the tomato, onion slices, and cheese in half and layer them on top of the lunch meat, tomato first.

Top with the lettuce.

Then put the sandwich together, holding it together with one toothpick through each end of the sandwich.

Slip a third toothpick through the middle.

Cut in half and enjoy!

Storing Leftovers

These are best right when you make them.

They will get too soggy if you store them.

Tips and Tricks

  • You can use any toppings you like. Try deli sliced ham, deli roast beef, or even chicken or tuna salad instead of the turkey and feel free to customize the veggies to your liking.
  • It makes things so much easier if you slice the pickle that will be on the bottom so that it sits flat.
  • The sandwich may feel a little slick when you stack it. Just go slow and it will work!

Ingredients

  • 1 Large Pickle
  • 1 tbsp Real Mayo
  • 2 slices Turkey Lunch Meat
  • 1 large Tomato slice
  • 1 large Slice Red Onion
  • 1 slice American Cheese
  • 1 large Leaf of Romaine Lettuce

Instructions

  • Slice the pickle in half, long ways.
    1 Large Pickle
  • Use a spoon to gently scoop out the middle seed portion of the pickle. Don’t scoop too deep as you want to leave some filling for support.
  • Use a paper towel to dab the pickles to dry them a bit.
  • Choose the pickle half that will be on the bottom. If it’s not sitting flat, flip it over so the outside of the pickle is facing up and use a knife to trim the bottom so it will sit flat.
  • Spread the mayo on the inside of the pickle where you scooped out the seeds.
    1 tbsp Real Mayo
  • Fold the lunch meat and place it in the hole, with a bit hanging over each side.
    2 slices Turkey Lunch Meat
  • Cut the tomato and onion slices in half and add those to the sandwich, starting with the tomato. It will start getting tall at this point, so be careful it doesn’t fall apart on you.
    1 large Tomato slice, 1 large Slice Red Onion
  • Cut the cheese slice in half and add it to the sandwich before adding the lettuce.
    1 slice American Cheese, 1 large Leaf of Romaine Lettuce
  • Have the toothpicks ready and add the top of the pickle, lining it up with the other pickle half. Slip a toothpick through the top of each end of the pickle pushing it all the way to the bottom of the sandwich, ending with a toothpick in the middle. This will keep it from falling apart.
  • Cut in half and enjoy!
