Ramen noodle chowder is a yummy, budget friendly take on corn chowder. This easy soup stretches your ramen noodles into a 4 serving meal in just about 10 minutes!
Now that some of my sons are getting older and leaving the nest, I’m trying to teach them how to stretch their food budgets.
Like most college aged kids, money is tight but cooking isn’t high on their list of priorities.
So things like this ramen noodle chowder are perfect for them!
It turns a package of ramen, a can of corn, a cup of milk and some spices into a thick and comforting soup in just about 10 minutes.
Perfect for those times when you are short on time and cash but still have a big appetite!
Ingredients
To make this you’ll need:
- Water
- Ramen noodles– A 3 ounce package of chicken flavored ramen along with the seasoning packet
- Corn– An 8 ounce can of corn kernels, drained
- Milk– Whole is best but anything you have in your fridge will do
- Spices– Onion powder and curry powder
- Cornstarch– To make a slurry to thicken the soup up
- Garnish– Totally optional but you could top it with cheddar cheese and crumbled bacon bits if you desire.
How to Make
Ramen noodle chowder is super easy to make!
Just bring the water to a boil in a small pot.
Once the water boils, break the ramen square into four pieces and add it to the boiling water along with the seasoning packet.
Stir the noodles with the water and seasoning to combine it all, and immediately reduce the heat to medium.
Cook the ramen for 2-3 minutes or until the noodles are tender.
At this point stir the corn, milk, and the rest of the spices into the pot.
Let everything keep cooking just until the mixture is warmed through.
Then whisk the cornstarch and two tablespoons of water together.
Stir the cornstarch slurry into the soup.
Ladle into bowls and serve warm topped with cheese and bits of bacon.
Enjoy!
Storing Leftovers
I don’t recommend saving this soup since the ramen noodles will get soggy after a couple of hours in the fridge.
Tips and Tricks
- Prefer a soup with some protein? Add chopped rotisserie chicken or diced ham. Either will work.
- Want more veggies? Cooked carrots or steamed broccoli are both yummy additions.
- Spice it up with a pinch of cayenne pepper or crushed red pepper flakes.
