Scotch Eggs (Air Fryer Recipe)

Air fryer Scotch eggs give you all the flavor of the traditional breakfast treat without the mess or grease from deep frying them. Crispy golden brown sausage balls feature a warm hard boiled egg at the center for a filling, grab and go breakfast treat.

With four very active kids, getting a good source of protein has always been important to me before starting their day.

But this Mama stays busy! And I’ve never been a morning person, especially not before my first cup of coffee.

I’ve found that meal prepping on the weekends is my saving grace on hectic mornings.

One of my favorite things to throw together are these air fried scotch eggs. They’re quick, easy, and reheat beautifully when we’re all trying to get out the door.

Crispy sausage surrounds hard boiled eggs, making this grab and go breakfast a delicious protein packed addition to your family’s mornings.

Ingredients Needed

Like all my favorite recipes these air fried scotch eggs require a relatively short, simple list of ingredients.

To make them you’ll need:

  • Hard Boiled Eggs – Six of them, peeled & patted dry. Make sure to dry them because the excess moisture can prevent the sausage coating from sticking when cooking.
  • Sausage – 1 pound of ground sausage, you can use mild or spicy depending on your personal preferences.
  • Flour – All purpose
  • Egg – A large egg, beaten
  • Bread Crumbs – 1/2 cup of plain, unseasoned bread crumbs. The fine kind, not the crispy panko variety.

Once you’ve gathered all of the required ingredients, you’re ready to whip up a batch of the crispiest scotch eggs in your air fryer!

How To Make

Making scotch eggs in the air fryer is surprisingly simple.

Start by dividing the sausage into six equal portions, then flatten them out slightly into discs.

Add a peeled and dried hardboiled egg to the center of each sausage disc. Wrap the sausage up around the sides of each egg and over to cover, pinching shut then smoothing out the seam. Set them aside.

Add the flour to a flat plate, the beaten egg to a small bowl, and finally the bread crumbs to another flat plate.

Gently roll each of the sausage balls first in the flour evenly to coat, followed by the egg, then finally the bread crumbs until coated evenly on all sides.

Be sure to get a good egg coating all the way around because the bread crumbs won’t stick to any area without it.

Transfer the sausage balls to the basket of an air fryer, making sure that they aren’t actually touching each other.

Air fry at 390F for 12 minutes, using tongs to flip each one at the half way mark.

Again using tongs as the sausage balls will be hot, transfer them to a serving plate.

Serve them warm and enjoy!

Storing

Leftover Scotch eggs can be stored in an airtight container in the refrigerator for up to 3 days, or in the freezer for up to 3 months.

Tips & Tricks

  • Make sure to pat the eggs dry before encasing them in the sausage. Any excess moisture will prevent the sausage coating from sticking when cooking.
  • When coating the balls in the beaten egg, make sure to turn the ball and get the egg coating equally onto all parts. The breading won’t stick to any bits without the egg.
  • Use tongs to flip and remove the hot sausage balls from the air fryer to prevent burning your hands and fingers.

Ingredients

  • 6 hard boiled eggs peeled & patted dry
  • 1 lb ground sausage
  • 1/4 cup flour
  • 1 large egg beaten
  • 1/2 cup plain bread crumbs

Instructions

  • Divide the sausage into 6 equal portions, then flatten them slightly and wrap each sausage circle around an egg until each is evenly incased and sealed in sausage.

  • Roll each sausage wrapped egg in flour, then in the beaten egg. Roll in bread crumbs until each is evenly coated.
    1/4 cup flour, 1 large egg, 1/2 cup plain bread crumbs
  • Transfer the eggs to the basket of an air fryer, making sure they don't touch.
  • Air fry at 390° for 12 minutes, turning them over halfway through.
  • Serve warm & enjoy!
