Slow Cooker Bananas Foster

Slow cooker bananas foster turns the elegant dessert into an easy to make delight! Bananas get cooked with a sweet mixture of brown sugar, butter, rum, and spices for a rich caramely delight perfect for serving with ice cream.

Bananas foster is a real treat.

Caramelized bananas in a rum caramel sauce served warm with a scoop of vanilla ice cream.

Don’t mind if I do.

But I will never make it the traditional way and flambee the rum.

I am not that brave.

Nor do I have the desire to do something so complicated when my slow cooker yields such delicious results.

Why do they call it Bananas Foster?

This New Orleans classic was created by chef Paul Blange of Brennan’s Restaurant.

The owner, Owen Brennan, challenged Chef Blange to create a new banana dessert to promote the imported fruit.

Chef Blange came up with a showy way to serve caramelized bananas flambeed in rum tableside.

Owen was delighted and named the dessert for his friend, Richard Foster, a local civic and business leader.

Ingredients

To make this you’ll need:

  • Bananas– Peeled
  • Brown sugar– When you measure it, make sure you pack the cup.
  • Butter– Melted
  • Rum– Use a rum you enjoy drinking
  • Spices– Vanilla extract and ground cinnamon
  • Optional garnishes– Chopped walnuts and shredded coconut
  • Vanilla ice cream– For serving

How to Make

Slow cooker bananas foster is probably the easiest way to make the classic dessert!

Just cut the peeled bananas in half lengthwise, and lay them cut side down in the bottom of your slow cooker.

Whisk the brown sugar, butter, rum, vanilla extract, and cinnamon together in a mixing bowl.

Then pour this mixture evenly out over the bananas.

Cover and cook on LOW heat for 1 1/2 – 2 hours.

Serve warm with vanilla ice cream, sprinkled with walnuts and shredded coconut if desired.

Does bananas foster taste like alcohol?

There will be a fairly obvious rum flavor in this dish so make sure you use an unflavored rum (ie not coconut rum like Malibu) in this dish.

Can I serve bananas foster to my kids?

While most of the alcohol will cook off, if you are concerned about serving this to kids, omit the rum and use rum extract instead.

Storing Leftovers

I don’t recommend planning for leftovers.

The bananas won’t hold up particularly well in the fridge and the caramel will sort of solidify.

Tips and Tricks

  • Make sure to use rum you actually would drink and be sure to choose a rum without fruit flavors added to it!
  • For a really decadent experience, spoon this over French toast, waffles, or pancakes and top it with whipped cream.
  • Choose a quality vanilla ice cream for the ultimate in dessert indulgence.

Ingredients

  • 5 medium bananas peeled
  • 1 packed cup brown sugar
  • 1/4 cup melted butter
  • 1/4 cup rum
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 cup chopped walnuts for garnish
  • shredded coconut for garnish, optional
  • vanilla ice cream for serving, optional

Instructions

  • Cut the peeled bananas in half lengthwise, then lay them (cut side down) in the bottom of your slow cooker.
