Slow cooker chicken spaghetti is the very definition of a dump and go, set it and forget it kind of meal! With almost no prep, you can put this hearty dinner together quickly in the morning and come home to a delicious dinner ready to go.
As my kids get older, life gets busier.
And, of course, as life gets busier I have less time than ever to get a decent dinner together.
But, being that I have 4 boys, you can sure bet their appetites are still there and bigger than ever!
So I have to have an arsenal of hearty, quick recipes that I can make even when the days are a blur of activity.
This slow cooker chicken spaghetti is perfect for those days!
It takes literally 5 minutes to throw together and I come home and dinner is done.
Winner, winner slow cooker chicken spaghetti dinner!
Ingredients
To make this you’ll need:
- Chicken– Boneless, skinless chicken breasts
- Diced tomatoes– The canned kind with green chilies like Rotel
- Cream of chicken soup– Don’t have cream of chicken? Use any cream of you have! Cream of celery, mushroom, or even cheddar would all work well.
- Diced onion– Save yourself the time and buy the pre-diced onion in the produce section of the store.
- Minced garlic– Again you can buy a jar of this and save yourself the time!
- Spices– Onion powder, paprika, salt, and pepper
- Cheese– Sharp cheddar
- Sour cream– Use full fat
- Spaghetti
How to Make
To make this easy slow cooker chicken spaghetti, just add the chicken, seasonings, onion, garlic, soup, and canned tomatoes to your slow cooker.
Stir it all together so it’s evenly combined.
Put the lid on and cook it on low for 4-5 hours or until the chicken is cooked.
Shred the chicken and stir in the sour cream and cheddar cheese.
Then boil up some spaghetti according to the directions on the package.
Stir the cooked spaghetti into the slow cooker.
Serve and enjoy!
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 4 days.
Reheat in the microwave until warmed through.
Will the chicken dry out in the slow cooker?
No if you cook the breasts for a maximum of 5 hours.
If you want to make sure you have moist chicken, you could substitute chicken thighs and cook them for a maximum of 6 hours.
But the liquid from the Rotel also adds moisture to the dish to keep the chicken happy so you really shouldn’t have to worry about it.
Tips and Tricks
- Want this ready faster? Cook it on high for 3 hours.
- Top with fresh chopped parsley if desired.
- Feel free to adjust the seasoning to your tastes.
- Want to add some more veggie action in? Buy a container of sliced bell peppers or fajita blend vegetables, which are normally a blend of peppers and onions, and add those!

- 1 lb of skinless boneless chicken breasts
- 1 10 oz can of diced tomatoes with green chilies Rotel
- 2 cans of cream of chicken soup
- 1/2 cup diced onion
- 2 tbsp minced garlic
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp salt
- 1 tsp pepper
- 2 cups of sharp cheddar cheese
- 1/4 cup sour cream
- 1 lb spaghetti
Instructions
- Add the chicken, seasonings, onion, cream of chicken soup, diced tomatoes and green chilies and garlic to an 8 quart slow cooker and stir. Cook on low for 4-5 hours or until the chicken is cooked.1 lb of skinless boneless chicken breasts, 1 10 oz can of diced tomatoes with green chilies, 2 cans of cream of chicken soup, 1/2 cup diced onion, 2 tbsp minced garlic, 1 tsp onion powder, 1 tsp paprika, 1 tsp salt, 1 tsp pepper
- When ready slice or shred the chicken and return back to slow cooker. Start boiling the noodles. Add in the shredded cheese and sour cream and stir.2 cups of sharp cheddar cheese, 1/4 cup sour cream
- Add the cooked spaghetti into the slow cooker and stir.1 lb spaghetti
- Serve and enjoy!
