Spinach feta salmon burgers come are a delicious way to stretch seafood into a meal for 4 with only about 15 minutes of active prep and cooking. Perfect for a light but satisfying meal any busy day!
I love finding ways to fit seafood into our family meals.
But seafood is pretty expensive so I try to look for ways to stretch it to feed more people.
These spinach feta salmon burgers are a tasty and easy way to do just that.
And they are full of wholesome ingredients and nutrients from the salmon and spinach but packed with flavor from the burgers themselves and the avocado sauce that my family loves.
Ingredients
To make these you’ll need ingredients for the burgers and for the sauce.
For the salmon burgers you’ll need:
- Salmon– A pound of boneless skinless salmon roughly chopped.
- Spinach– About 2 ounces or a tightly packed cup of baby spinach
- Feta cheese– Crumbled
- Lemon juice– Preferably fresh
- Black pepper
For the avocado sauce you’ll need:
- Avocado– Half a ripe avocado
- Sour cream
- Lemon juice– Fresh lemon juice
- Garlic– minced
You’ll also want brioche buns and thinly sliced red onion for the burgers themselves.
How to Make
These spinach feta salmon burgers are surprisingly easy to make.
Start by making the salmon burgers themselves by pulsing together the salmon, spinach, cheese, lemon juice, and pepper in the bowl of a food processor fitted with the blade attachment until ground and evenly combined.
Make 4 equal patties from the mixture.
Put the patties on a parchment paper lined baking sheet and cover it with foil.
Chill the patties for 1 hour.
Right before you are ready to start cooking the burgers, mash the avocado in a small bowl.
Once the avocado is mashed, mix in the remaining sauce ingredients.
Set the sauce aside while you cook the burgers, grilling the burgers for roughly 3 minutes on each side or just until mixed through.
Toast the buns if you desire.
Then add a salmon burger to each bottom bun and top the burgers with a bit of sauce and onion before closing them with the top bun.
Serve warm and enjoy!
Other Topping Ideas
These are delicious with onion and the avocado sauce as is but you could add other toppings like:
- lettuce
- baby spinach leaves
- sliced tomatoes
- tartar sauce
Storing Leftovers
Store leftover salmon patties in an airtight container in the fridge for up to 2 days.
Reheat on the stove top until warmed through.
Tips and Tricks
- You could add some fresh or dried dill to the burgers for a little extra flavor.
- The burgers are done when the interior reaches 145 degrees on a meat thermometer.
- The avocado sauce isn’t essential but I highly recommend it! It’s so good!

- 1 1/2 tbsp lemon juice
- dash ground black pepper
For The Avocado Sauce
- 1/2 ripe avocado
- 4 tbsp sour cream
- 4 tsp lemon juice
- 1 tsp minced garlic
- 4 brioche buns
- thinly sliced red onion
Instructions
- Add the salmon, spinach, cheese, lemon juice, and pepper to the bowl of a food processor fitted with the blade attachment. Blend until evenly ground and combined.1 lb boneless, skinless salmon, 1 packed cup baby spinach, 2 oz feta cheese, 1 1/2 tbsp lemon juice, dash ground black pepper
- Form the mixture into 4 equal patties and lay on a parchment paper lined baking sheet. Cover and chill for 1 hour.
- Add the avocado to a small bowl and mash. Add the remaining sauce ingredients to the bowl and mix together until evenly combined. Set aside.1/2 ripe avocado, 4 tbsp sour cream, 4 tsp lemon juice, 1 tsp minced garlic
- Grill the burgers for roughly three minutes per side, just until cooked through.
- Toast the buns, add a salmon burger to each, top with a bit of sauce and onion, before finishing off with the top bun.4 brioche buns, thinly sliced red onion
- Serve warm & enjoy!
