Thanksgiving Casserole

Thanksgiving is right around the corner and that means all the glorious celebrations and leftovers.
And Thanksgiving casserole is the perfect dish for informal gatherings like Friendsgivings or even just a delicious way to use up your leftovers.
We’re talking layers of fluffy potatoes, green beans, and stuffing, topped with turkey, cranberries, and gravy.
It’s a yummy way to use up your leftovers or enjoy a taste of the holidays year round.
Ingredients
To make this you’ll need:
- Mashed potatoes– You can use leftover mashed potatoes or an 8 ounce package of instant mashed potatoes prepared according to the package instructions.
- Green beans– 2 15 ounce cans of drained cut green beans
- Turkey– Chopped roast turkey. Your leftovers from Thanksgiving would be perfect. If you’re making this another time, you could use canned turkey instead.
- Brown gravy mix– Prepared according to the package instructions. You could also use leftover turkey gravy.
- Stuffing– Either leftover stuffing or a a box of turkey stuffing mix prepared according to the package directions substituting chicken broth for water.
- Rehydrated dried cranberries– Rehydrate craisins by soaking them in a cup of warm water until they plump
- Butter– Cut into pats
How to Make
Thanksgiving casserole is very easy to make since it’s just layering the ingredients in a casserole dish.
Start by spreading mashed potatoes out in an even layer in a 9×13″ baking dish.
Top the layer of mashed potatoes with an even layer of drained green beans.
Next spread the turkey over the green beans and pour the gravy over the turkey layer.
Finally stir the rehydrated cranberries into the stuffing and then spread the cranberry stuffing over the turkey layer.
Top the stuffing layer with thin pats of butter even spread out on top of the casserole.
Bake the casserole at 400 degrees for 30 minutes.
Serve warm and enjoy!
Storing Leftovers
Store leftovers in the fridge either tightly covered in the casserole dish or in an airtight container.
The leftovers are good to eat up to 4 days after the turkey was initially cooked so if you made the turkey the day before, discard your leftover casserole after 3 days.
Tips and Tricks
- While this recipe specifies using instant potatoes you could use leftover mashed potatoes or an equivalent amount of the premade potatoes you can buy in the refrigerated department.
- If you are making this outside of the holiday season and can’t find turkey, you could use chopped sliced deli turkey or even chopped rotisserie chicken.
- Chicken stuffing mix would be a good substitute for the turkey stuffing if you can’t find that.

- 1 1/2 - 2 cups chopped roasted turkey can substitute canned, if needed
- 1 .87 oz pkt brown gravy mix prepared according to package instructions
- 1 6 oz box turkey stuffing mix prepared according to box directions but with chicken broth instead of water
- 1 cup dried cranberries rehydrated by soaking in warm water
- 2-4 tbsp butter cut into thin pats
Instructions
- Spread the prepared mashed potatoes out in an even layer in a 9x13" baking dish.1 8 oz pkg instant mashed potatoes
- Top with the drained beans and spread them out evenly over the potatoes.2 15 oz cans cut green beans
- Spread the chopped turkey evenly out overtop. Spread the gravy out evenly overtop of the meat.1 1/2 - 2 cups chopped roasted turkey, 1 .87 oz pkt brown gravy mix
- Drain the rehydrated cranberries and add them to the prepared stuffing mixture, then stir them together until evenly combined. Add the stuffing mixture to the casserole and spread out in an even layer.1 6 oz box turkey stuffing mix, 1 cup dried cranberries
- Top the casserole with the thin pats of butter.2-4 tbsp butter
- Bake the casserole at 400° for 30 minutes.
- Serve warm and enjoy!
