2 ingredient coleslaw is the quickest way to make this classic summer side dish. With a creamy dressing, this quick and easy coleslaw is delicious on sandwiches or hot dogs, with barbecue, and even with ham.

Coleslaw is such an underrated dish.

It’s crunchy and cooling.

It makes any pulled pork sandwich even better.

And alongside of barbecue chicken.

So much yum.

And coleslaw isn’t just for summer, at least not here in the South.

We also serve it with ham and it always ends up as part of our Christmas and Easter spreads.

With only two ingredients, you’ll see why it’s no trouble at all to make this quick coleslaw dressing any time!

Ingredients

To make this you’ll need:

  • Cabbage– Shred and core the cabbage. Needs to be finely shred, preferably grated.
  • Mayo–  While you can use any mayo you love, we have found Hellman’s to be the best and DO NOT recommend using using Miracle Whip or other mayonnaise style dressings.

You’ll also need salt and pepper or other seasonings.

Don’t skip the salt & pepper- as they really make this recipe come together. Use a quality salt & pepper, and freshly ground is recommended.

How to Make

This is such quick and easy coleslaw!

To make it, core the cabbage and shred it in a food processor using the grater attachment.

Transfer the shredded cabbage to a large mixing bowl.

Then stir the mayo into the shredded cabbage.

Season it with salt and pepper, stirring to combine.

Give the coleslaw a quick taste and adjust the seasoning as needed.

Serve and enjoy!

Can I make coleslaw ahead of time?

This recipe can be made up to 2 hours ahead of time.

If you make it any further in advance than that, it may get soggy and the cabbage will wilt.

Storing

I don’t recommend saving leftover coleslaw.

It tends to get soggy and not hold up well.

Tips and Tricks

  • I highly recommend using a food processor to shred the cabbage. The fine shred is part of what makes this simple recipe work so well.
  • You can adjust or use different seasonings if desired, but we’ve found simple is best.
  • If you don’t have a food processor, you can also shred the cabbage using a mandolin or a knife. Just cut it as finely as you can. A box grater will also work.

Ingredients

  • 1 large head cabbage cored, roughly 12 cups shredded cabbage
  • 1- 1 1/4 cups mayo
  • 3/4 tsp freshly ground black pepper
  • pinch salt

Instructions

  • Core the cabbage, and shred it- preferably using the grater attachment on a food processor. It should yield roughly 12 cups of shredded cabbage.
  • Transfer the shredded cabbage to a large mixing bowl.
  • Add the mayo to the mixing bowl, and stir together until both are evenly combined and the mixture's creamy.
  • Season with pepper & salt, stirring again to evenly combine. Taste and adjust seasoning, as needed.
  • Serve & enjoy!

    So simple – and it’s the best! I didn’t even add salt & pepper. A little grated carrot adds a touch of color if desired.
