Quick and easy lasagna soup is a lazy shortcut version of the soup you know and love. Made right in your slow cooker, this soup is a life saver on busy days that your whole family will love!
Today I’m going to share one of my dirtiest cooking secrets.
You ready?
Here it is: you don’t have to use a frozen lasagna just as a frozen lasagna.
Oh no.
While it can be a meal all by itself, you can also turn it into something even more delicious (yes it’s possible!) than frozen lasagna.
We’re talking hearty, cheesy, meaty lasagna soup.
But even better because it doesn’t need a ton of work or ingredients!
And just like the non shortcut version, everyone loves this lasagna soup and will be begging you to make it over and over again.
Ingredients
To make this you’ll need:
- Frozen lasagna: A party size tray of Stouffer’s lasagna with meat sauce. If you want to sub another brand that’s ok, but you want about the same size lasagna. A version that specifically says ‘meat sauce’ is important though.
- Broth– Chicken broth- both homemade or store bought will work.
- Spices– Oregano, basil, and garlic powder
- Cheese– Shredded mozzarella and/or ricotta for serving
How to Make
This is the easiest lasagna soup you’ll ever make!
To do it, just let the frozen lasagna thaw slightly until it’s no longer rock hard.
Then, carefully cut it into roughly 1-1 1/2″ chunks using a sharp knife.
Put the lasagna pieces in the bowl of your slow cooker and pour the broth and seasonings over top.
Cover the slow cooker and cook the soup on HIGH for 3-4 hours, or LOW for 6-7 hours until the lasagna pieces are soupy, soft, and warm through out.
Ladle it into bowls and serve warm with your favorite toppings like shredded mozzarella and ricotta.
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 4 days.
Reheat in the slow cooker or microwave until warmed through, adding more broth if needed.
Tips and Tricks
- If the broth doesn’t completely cover the lasagna pieces when added to the slow cooker, it’s OK!
- You can add more broth if you want the consistency a bit thinner, but wait until the soup is warmed through before you do so you can see what the consistency is.
- While this is written for a meat lasagna, you could make a similar meal with their cheese lasagna or even their vegetable lasagna.
- If you use the vegetable lasagna and want this to stay vegetarian, sub vegetable stock for chicken broth.

Ingredients

- 8 cups chicken broth
- 1 tsp dried oregano
- 1/4 tsp dried basil
- 1/2 tsp garlic powder
- shredded mozzarella for serving
- ricotta cheese for serving
Instructions
- Remove the lasagna from the freezer, and let it thaw slightly- until mostly still frozen, but no longer rock hard. Using a sharp knife, carefully cut it into roughly 1-1 1/2" chunks.
- Add all of the lasagna chunks to the bowl of your slow cooker. Pour the broth into the slow cooker, and add the seasonings.
- Cover and cook on HIGH for 3-4 hours, or LOW for 6-7 hours- just until soupy, soft, and evenly combined & hot throughout.
- Ladle into bowls and serve warm with your favorite toppings. We use shredded mozzarella and a dollop of creamy ricotta cheese.
