Ingredients
To make this you’ll need:
- Chicken– Go for chicken tenderloins for super fast cooking and the easiest prep. You could also cut chicken breasts into tenders if you prefer.
- Olive oil– Extra virgin.
- Vinegar– White wine vinegar.
- Lemon juice– Fresh is best but bottled will work.
- Garlic– Minced.
- Seasoning– Greek seasoning, salt, and pepper.
- Zucchini– A large zucchini chopped.
- Red onion– A small red onion, peeled and diced. You could also slice it into wedges.
- Tomatoes– Grape or cherry tomatoes
- Feta cheese

How to Make
This air fryer Greek chicken and veggies is so easy to make!
Just add the chicken to a large ziplocking bag and set it aside while you make the marinade.
To make the marinade, whisk the oil, vinegar, lemon juice, garlic, and seasonings together in a small bowl until evenly combined.
Pour half the marinade over the chicken and then seal the bag, squeezing out the excess air as you do.
Lay the chicken flat in the fridge and let it chill for at least an hour, flipping halfway through.
Just before you are ready to cook the chicken, add the vegetables to a mixing bowl and toss with the remaining marinade.
Set the veggies aside.
Air fry the marinated chicken at 400° for 7 minutes.
After 7 minutes, flip the chicken and add the vegetables to the basket.
Air fry everything for another 7-8 minutes or just until the chicken reaches an internal temperature of 165°.
Serve warm, topped with crumbled feta cheese.

- 1 small red onion peeled & diced, or sliced into wedges
- 1 cup grape tomatoes
- 1/2 cup crumbled feta cheese
Instructions
- Add the chicken to a large ziplocking bag, then set it aside.1 lb chicken tenderloins
- Add the oil, vinegar, lemon juice, garlic, and seasonings to a small bowl. Whisk them together until evenly combined.1/4 cup extra virgin olive oil, 2 tbsp white wine vinegar, 2 tbsp lemon juice, 1 tbsp minced garlic, 1 tbsp Greek seasoning, 1 tsp salt, 1/2 tsp pepper
