Birthday cake mix blondies are an easy, sweet treat you can throw together for a special occasion or just because. Loaded with sprinkles, these pretty blondies are perfect for parties!

Birthdays are a big deal in this house.

It doesn’t matter that my boys are getting older.

I still want to celebrate them and love on them as long as they’ll let me.

And what better way to do it than with birthday cake mix blondies?

Quite possibly the best cake mix blondies ever, these Funfetti blondies are a chewy, sweet treat that definitely makes any celebration or birthday brighter.

Ingredients

To make these, you’ll need:

  • Cake mix– Funfetti cake mix. If you don’t have Funfetti or other confetti cake, you can use yellow cake mix and extra sprinkles.
  • Butter– Melted
  • Eggs
  • Heavy cream– Don’t use regular milk or half and half. The heavy cream is the secret ingredient to giving these the best texture and making them taste totally homemade!
  • White chocolate– Chopped
  • Sprinkles– Rainbow sprinkles for maximum birthday cake vibes.

How to Make

Birthday cake batter blondies are a snap to make.

Just preheat your oven to 350 F.

Then, grease or line a 9×9 baking pan with parchment paper and set aside the prepared pan aside.

While the oven comes together, stir together the cake mix, melted butter, eggs, and heavy cream in a large mixing bowl.

Once the batter just comes together, fold in the chopped chocolate and rainbow sprinkles.

Spread the batter out into the prepared pan.

Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Let the blondies cool for at least 30 minutes before slicing and serving.

Storing

Store the blondies tightly wrapped on your counter for up to 4 days.

Tips and Tricks

  • Add extra sprinkles to the top for even more fun!
  • If you plan to use yellow cake mix, you can customize the sprinkles to suit any occasion! Red and green, orange and black, etc!
  • Don’t overmix the batter or the blondies will be sort of tough.

Ingredients

  • 1 box birthday cake cake mix
  • 1/3 cup melted butter
  • 2 large eggs
  • 1/4 cup heavy cream
  • 1/2 cup chopped white chocolate
  • 2-3 tbsp rainbow sprinkles

Instructions

  • Preheat oven to 350 F, grease or line a 9x9 baking pan and set aside
  • In a large bowl, stir together the cake mix, melted butter, eggs, and heavy cream
  • Fold in the chopped chocolate and rainbow sprinkles, reserving some sprinkles for the top if desired
  • Spread the batter into the prepared pan and bake in preheated oven 25-30 minutes, or until a toothpick inserted into the center comes out clean
  • Allow to cool at least 30 minutes before slicing and serving
