Cheesy chicken and broccoli pie is an easy, family friendly casserole. With only 10 minutes of prep, a dinner even the pickiest eaters will love can be in the oven!
Chicken, broccoli and cheese is a match made in food heaven.
It’s one of my family’s favorite combinations.
And this version of impossible chicken and broccoli pie is one of the best.
Don’t let the name fool you though!
This casserole is so easy to make that it’ll be on your table regularly.
Ingredients
To make this you’ll need:
- Broccoli– Steamed broccoli florets.
- Cheese– Shredded cheddar
- Chicken– I recommend using chopped rotisserie chicken but you could also use 10 ounces of drained, chopped canned chicken.
- Onion– Finely minced yellow onion
- Spices– Garlic powder, onion powder, and salt and pepper
- Bisquick
- Milk– Not whole milk
- Eggs
How to Make
This chicken and broccoli pie is so easy to make!
To do it, liberally spray a 9″ pie plate with nonstick cooking spray.
Set it aside.
Then add the broccoli, 1/2 cup of cheese, chicken, chopped onion, and seasonings to a mixing bowl.
Stir until all the ingredients have been evenly combined.
Spoon the mixture into the prepared pie dish, spreading it out evenly.
Set the dish aside.
In a separate mixing bowl whisk together the Bisquick, milk, and eggs until the mixture is smooth.
Pour this evenly out over the filled pie dish.
Put the pie dish in the oven.
Bake it at 400° for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
Once it is cooked through, sprinkle the remaining cup of cheese evenly over top and then bake again until the cheese has melted and formed a golden brown crust.
Remove the pie from the oven and let it rest a full 5 minutes.
Cut the pie into slices and serve.
Enjoy!
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 4 days.
You could also wrap the pie plate tightly with foil and refrigerate.
Reheat the leftovers in a hot oven or microwave until warmed through.
Tips and Tricks
- If you end up using canned chicken, make sure the cans are drained well. This pie doesn’t need any excess liquid or moisture.
- Don’t have a pie plate? You can also bake this in an 8×8 inch baking dish. Just make sure that, like the pie plate, it’s greased first.
- Make sure you let the pie rest. It needs time to set before you slice it.
