You ever go to Cracker Barrel and instead of a main course just get the plate of sides?

My hand surely isn’t the only one up right now.

And when you get the plate of 4 sides you get a double helping of hashbrown casserole?

No?

Just me?

Somehow I think not.

Well, this dinner is for you, my fellow hashbrown casserole afficianados.

I see you, and I give you this cheesy hashbrown casserole with ground beef.

It takes the concept of the hashbrown casserole you know and love and adds a rich and creamy sauce and a serving of protein.

And dinner is done and everyone is happy!

Ingredients

To make this you’ll need:

  • Ground beef– Get lean ground beef. 85/15 or leaner.
  • Yellow onion– Diced
  • Hashbrowns– Refrigerated, shredded hashbrowns.
  • Salt and pepper– To taste
  • Butter– Melted
  • Cream of chicken soup– Condensed. You could switch out most of condensed soup for the cream of chicken if you don’t have it.
  • Sour cream
  • Cheese– Shredded cheddar

How to Make

Cheesy hashbrown casserole with ground beef is pretty easy to make.

To do it, start by cooking the ground beef and onion in a large skillet set over medium heat until the beef is browned through.

Strain the excess grease off and discard it.

Set the cooked beef aside.

Then stir the melted butter, condensed soup, and sour cream together in a large mixing bowluntil evenly combined.

Season the mixture with salt and pepper.

Stir the cooked ground beef, hashbrowns, and one cup of cheese into the mixture until evenly combined.

Transfer the hashbrown mixture to the a 9×13″ baking dish you’ve sprayed with nonstick spray and spread it out in an even layer.

Sprinkle the rest of the cheese evenly out overtop.

Bake at 350° for 35 minutes, or until the edges are hot and bubbly and the cheese has melted.

Serve warm and enjoy!

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 4 days.

Reheat in the microwave until warmed through.

Tips and Tricks

  • Make sure you are using lean ground beef. If you buy the 73 percent kind, your beef will be very greasy and cook down too much.
  • You could add more veggies into this by dicing up a green pepper and adding that to the beef and onions while you brown the beef.
  • If you wanted to add more seasoning, you could season the beef with a little garlic powder and smoked paprika.

Ingredients

  • 1 1/2 lbs lean ground beef
  • 1/2 cup diced yellow onion
  • 1 20 oz bag refrigerated shredded hashbrowns
  • 1/4 cup melted butter
  • salt & pepper to taste
  • 1 10.75 oz can condensed cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese

Instructions

  • Add the ground beef and onion to a large skillet set over medium heat. Cook and crumble the beef until completely browned. Strain to remove all excess grease. Set aside.
