Tender chicken, marinara, and pasta blend together with melty cheese for a comforting, family-friendly meal.

It’s packed with the classic cheesy, saucy flavor of chicken parm but unlike its more high maintenance cousin, it’s easy enough to throw together even on the busiest nights.

Ingredients

To make this you’ll need:

  • Olive oil– Extra virgin
  • Chicken– Boneless, skinless chicken breasts, cut into bite sized pieces.
  • Onion– Yellow onion, peeled and diced
  • Garlic– Pressed or minced
  • Chicken broth– Divided. You could also use stock.
  • Pasta– Rigatoni or penne work best
  • Tomato sauce– A 15 ounce can
  • Cheese– Shredded mozzarella and shredded Parmesan

How to Make

The beauty of Instant Pot cooking is how easy it is to make a complete dinner in one pot and this Instant Pot chicken parmesan pasta is no different!

Just add the liner to your Instant Pot and press the ‘saute’ button.

Heat the oil in the Pot liner.

Cook the chicken pieces in the hot oil, stirring often, until they’re golden brown on the outside but not cooked through.

Add the onion and garlic to the pot and cook for 2-3 minutes, stirring often, until softened.

Then pour 1 cup of broth into the pot and use a sturdy wooden spoon to deglaze the bottom of the pot, loosening up any stuck on browned bits that are hanging out on the pot liner.

Hit the ‘cancel’ button.

Add the pasta to the pot, followed by the rest of the broth.

Pour the tomato sauce evenly out overtop of the broth.

DO NOT stir.

Secure the lid on the pot turning to close, making sure the the vent valve is set to the sealed position.

Pressure cook on HIGH for 5 minutes.

Do a quick release when the Pot beeps by carefully opening the vent valve.

Stir in the mozzarella cheese.

Sprinkle the remaining cheese evenly out overtop and let sit for a couple minutes until melted.

Serve and enjoy!

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 4 days.

Reheat them in the microwave until warmed through.

Tips and Tricks

  • If you are using a different kind of pasta you will have to adjust the cook time either up or down based on the size of the pasta.
  • Make sure to add the tomato sauce on top of the broth and noodles and do not stir. If you add the sauce on the bottom or stir, you will likely get the burn notice on the pot.
  • Garnish it with a little fresh basil or crushed pepper flakes before serving.

Ingredients

  • 1 lb boneless, skinless chicken breasts chopped into small pieces

  • 4 cloves garlic pressed or minced

  • 12 oz dry pasta penne or rigatoni recommended
  • 1 15 oz can tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese

Instructions
