Do you remember the Meximelt from Taco Bell?

It was a fan favorite for awhile in the 80s and 90s, and not to date myself but a treat I often enjoyed growing up.

This menu item was discontinued in 2019, but came back briefly in 2024 to tease those of us that miss it dearly.

And while I treated myself many times while it was back, it didn’t stop me from missing it when it went away.

However these copycat Taco Bell Meximelts fill the hole left by this fast food favorite.

It recreates that classic combo of seasoned beef, melty cheese, and fresh pico wrapped in a soft tortilla.

The best part is how easy they are to make with a total cook time of 20 minutes, making them great for busy weeknights or quick lunches.

Ingredients

To make these you’ll need:

  • Ground beef– Leaner ground beef is better for this since you won’t have to drain off as much fat.
  • Taco seasoning– Use a 1 ounce packet of the Taco Bell taco seasoning for the most authentic Taco Bell flavor.
  • Cheese– Both shredded pepper jack and shredded cheddar
  • Tortillas– Flour tortillas
  • Pico de gallo– You can buy pico de gallo in the produce section at most grocery stores. You can also make your own.

How to Make

These copycat Taco Bell Meximelts are so easy!

Just brown the ground beef until it’s completely cooked through and crumbled.

Drain off the excess fat and then return the meat to the skillet.

Stir in the taco seasoning mix and the water called for on the package.

Cook the seasoned beef per the package instructions.

Divide the cheddar cheese evenly between the flour tortillas in an even layer.

Top the cheddar cheese layer with the beef, dividing it evenly between the tortillas.

Then, top the beef with the pepper jack cheese followed by a bit of pico on each.

Roll up the filled tortillas and wrap them in damp paper towels.

Heat them in the microwave, 2 at a time, for 1 minute.

Repeat until all the tortillas have been cooked.

Serve warm and enjoy!

Storing Leftovers

This is one of those dishes that doesn’t store well once it’s assembled.

If you think you might have extras, I recommend storing the beef separately in an airtight container in the fridge for up to 3 days.

Then put together new Meximelts when you are ready following the steps above.

Tips and Tricks

  • You can use ground chicken or turkey instead of beef if you prefer though it won’t be as spot on as ground beef.
  • Serve these with your favorite extras like guacamole and sour cream.
  • Customize these to your liking! For example skip the pico if you don’t like it and sub taco sauce or use a chunky salsa instead.

Ingredients

  • 1 lb ground beef
  • 1 1 oz pkt Taco Bell taco seasoning
  • 8 oz pepper jack cheese shredded
  • 8 oz cheddar cheese shredded
  • 8-10 flour tortillas
  • 1 cup pico de gallo

Instructions

  • Cook the ground beef until completely browned and crumbled. Drain, then return the meat to the skillet.
