Diner Style Hot Turkey Sandwiches (Open Faced Turkey Sandwiches)

Diner style hot turkey sandwiches are a classic open faced turkey sandwich perfect for using up your holiday leftovers. Thick slices of turkey sit on farmhouse style white bread and are smothered in sauteed onions and gravy for a sandwich worthy of any blue plate special!

Nothing’s better than classic diner food.

And while diners are the place for breakfast anytime of day, I’d be mistaken not to mention their amazing sandwiches.

If I ever want an open faced turkey sandwich swimming in onions and gravy, I’d hit a diner.

Or, now, I’d save myself the cash and make a dupe of my favorite blue plate special right at home with my leftover turkey and gravy.

It’s so simple and such a hearty meal that will feed even the hungriest appetites!

Ingredients

To make these hot turkey sandwiches you’ll need:

  • Gravy– Preferably turkey gravy. It can be homemade, leftover, or canned. If you can’t find turkey gravy you could substitute chicken gravy.
  • Turkey– Deli sliced roasted turkey or leftover turkey 
  • Onion– Yellow onion thinly sliced
  • Butter
  • Salt and pepper
  • White bread– Thickly sliced white bread like Pepperidge Farm farmhouse style

How to Make

These hot open faced turkey sandwiches are super easy to make and come together in less than 10 minutes.

Start by melting the butter in a large skillet set over medium heat.

Once the butter is melted, stir in the onions and season them with salt and pepper.

Cook the onions in the melted butter, stirring often until they’ve softened, roughly 3-5 minutes.

When the onions have softened, stir the gravy into the skillet to heat it through.

Once the gravy has warmed through, remove the skillet from the heat.

Warm the turkey, either in the microwave or on the stove top, just until warm.

Then build the sandwiches by putting 2 slices of bread on a plate side by side.

Top the bread with a quarter of the turkey and a quarter of the gravy.

Repeat until the rest of the sandwiches have been assembled.

Serve warm with your favorite sides.

What sides go with hot turkey sandwiches?

You can serve these open faced turkey sandwiches with fries or Mashed Potatoes.

They also pair well corn and green beans.

Can I make these ahead of time?

No. These sandwiches are best enjoyed immediately.

If they sit too long, the bread will get soggy.

Tips and Tricks

  • These are delicious anytime of year, but absolutely perfect for using up leftover turkey, gravy, and side dishes after the holidays.
  • Do NOT try to use thin lunch meat style turkey for these sandwiches. It won’t give you that diner feel.
  • Really craving this but can’t find turkey? No problem! Grab a rotisserie chicken from the grocery store instead and substitute thick slices of that for the turkey.

Ingredients

  • 24 oz turkey gravy
  • 1 lb deli sliced roasted turkey or leftover turkey
  • 1 yellow onion thinly sliced
  • 2 tbsp butter
  • salt & pepper to taste
  • 8 slices thick white bread I used Pepperidge Farm's farmhouse style for these

Instructions

  • Melt the butter in a large skillet set over medium heat. When melted, stir in the onions. Season them with salt & pepper, and cook stirring often until they've softened nicely- roughly 3-5 minutes.
  • Pour the gravy into the skillet, stirring to evenly combine. Cook just until heated through nicely, then remove the skillet from heat.
  • Warm the turkey, either in the microwave or on the stove top- just until warm, not too long that it cooks more.
  • Add two slices of bread to a waiting plate. Place 1/4 of the warmed turkey evenly out over both slices of bread. Pour 1/4 of the onion gravy evenly out over the turkey topped slices of bread.
  • Repeat until the rest of the sandwiches have been assembled.
  • Serve warm with your favorite sides.
