Ingredients

To make these you’ll need:

  • Ground chicken– Just regular ground chicken. No need to use ground chicken breast, which has a lot less fat and can get a little dry.
  • Egg– For binding
  • Bread crumbs– Panko
  • Salt and pepper– You can jazz them up with other seasonings if you want based on what you are serving with them.

How to Make

These easy chicken meatballs come together in a snap!

Just combine all the ingredients using your clean hands in a large mixing bowlr just until evenly combined.

Then roll out 18-20 roughly golf ball sized meatballs.

Evenly space the meatballs on a baking sheet lined with foil and sprayed with nonstick spray.

Bake the meatballs at 400° for 18-20 minutes or until they are cooked through and golden brown on the outside.

Use immediately, or cool them and freeze them for later.

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 5 days.

Reheat them in the microwave or the oven until warmed through.

Freezing Instructions

These chicken meatballs freeze beautifully.

To do it, just let them cool to room temperature and then put them in a ziplocking freezer bag.

Squeeze as much air as you can out of the bag and seal the bag.

Freeze them for up to 3 months.

Tips and Tricks

  • You can air fry these meatballs. To do it, spray the basket with nonstick cooking spray and add the meatballs in a single layer with space in between them all. Spray them lightly with oil. Air fry at 400F for 10 minutes. Flip and spray again. Then continue cooking for another 5-7 minutes. Repeat for the rest of the meatballs.
  • Don’t overmix the meat or the meatballs will be tough, not tender.
  • You can add so many flavors to these! If you want an Italian spin, add a teaspoon or so of Italian seasoning blend and some fresh, pressed or minced garlic. For a southwest flair, add some chili powder, cumin, and paprika. The sky’s the limit!

Ingredients

  • 1 lb ground chicken
  • 1 large egg
  • 1/2 cup panko bread crumbs
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  • Line a baking sheet with foil, spray it with nonstick cooking spray, then set it aside.
  • Add all of the ingredients to a large mixing bowl. Using clean hands, or a rubber spatula, mix everything together just until evenly combined. Don't overmix or the meatballs will be tough, not tender.
