French Onion Beef Stew
French onion beef stew is one of the easiest slow cooker beef stew recipes you’ll ever make and definitely one of the tastiest! Loaded with flavor from a French onion soup mix packet and rich cooking liquid, this dump and go soup will be a real hit whenever it’s on the table.
I am all about recipes that I can set and forget, especially when they are so hearty and filling.
This French onion beef stew is the perfect set it and forget it filling recipe.
I just toss all the ingredients in my trusty slow cooker in the morning and go about my day.
Then when I come home, a dinner that will feed 4 boys with big appetites is ready to go!
Ingredients
To make this you’ll need:
- Beef stew meat– 2 pounds of it cut into smaller cubes if needed.
- Onion soup mix– 2 1 ounce packages of your favorite variety.
- Spices– Smoked paprika, dried thyme leaves, and black pepper
- Red potatoes– Large red potatoes cut into 1″ pieces
- Baby carrots– You can cut them into smaller pieces but you don’t have to.
- Onion– A small yellow onion peeled and diced
- Condensed soup– 1 can of cream of mushroom soup and 1 can of cream of celery soup
- Ketchup
- Broth – Beef broth, although stock will also work
How to Make
Slow cooker French onion beef stew is so easy to make!
Just add the stew meat to the bowl of the slow cooker and sprinkle it evenly with the soup mix and the paprika.
Stir everything to coat with the soup mix and spice.
Then spred the veggies out over the seasoned beef.
In a separate bowl, whisk together the condensed soup, ketchup, water, and pepper until they are evenly combined.
Pour the soup mixture evenly over the beef and veggies in the slow cooker.
Cover and cook on LOW for 8 hours or HIGH for 4 hours.
Ladle into bowls, serve, and enjoy!
Storing Leftovers
Store leftovers covered in the bowl of your slow cooker in the fridge for up to 4 days or transfer them to another air tight container prior to refrigerating.
Reheat them in the slow cooker or microwave until warmed through.
Tips and Tricks
- I recommend lightly searing the beef on the stove before adding it to the slow cooker. While this optional, searing it (without cooking through) will lock in the juices keeping the meat nice and tender.
- You can switch out the condensed soup for two cans of cream of mushroom or two of cream of celery. If needed, you could substitute a can of cream of broccoli or even a can of condensed french onion soup instead.
- Don’t add salt to this. The onion soup mix and condensed soup already have plenty of salt.
- Serve this with a good hunk of crusty bread on the side!

- 1 cup ketchup
- 1/2 tsp ground pepper
- pinch thyme leaves
Instructions

- Add the broth, soups, ketchup, thyme leaves, and pepper to a mixing bowl and whisk them together until evenly combined then pour this evenly out over the ingredient in the slow cooker.6-8 cups beef broth, 1 10.5 oz can condensed cream of mushroom soup, 1 10.5 oz can condensed cream of celery soup, 1 cup ketchup, 1/2 tsp ground pepper, pinch thyme leaves
- Cover and cook on LOW for 8 hours, or HIGH on 4 hours.
